The Keto Broccoli Bacon Salad is by far one of our favorite Summer sides. Even the picky teen asks for it. It's crunchy, slightly sweet, salty and best of all satisfying. It's perfect for potlucks and parties but you should make extra so that you'll have some all to yourself.

🥘Ingredients:
- 5 Cups Broccoli Chopped- Fresh
- 12 oz bacon
- ½ cup green onions
- ½ cup pumpkin seeds * roasted or raw are both fine. Sunflower seeds are good too.
- Optional - Dried cranberries.
Just a small handful because they contain a lot of carbs. But they are delicious in this salad.
Dressing
- ¾ cup Mayonnaise full fat
- 5 tablespoon Allulose
- 2 tablespoon Apple Cider Vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper
👩🏿🍳How to make the Broccoli Salad:
- Fry the bacon while you are chopping the veggies. Chop the broccoli into small bite sized pieces and add all veggies to the mixing bowl with the seeds. See the post for making the tips to make this quick.
- Remove the bacon and let it drain and cool. You want this bacon crispy. Chop finely and add to the mixing bowl.
- Mix all dressing ingredients in a separate bowl until smooth. Taste it to make sure it suits your liking. This is the best time to adjust sweetness and "tanginess" with the vinegar. You can do this while the bacon is cooling.
- Add the bacon to your bowl and pour the dressing on top. Combine until the salad is coated.
- You can serve right away but it is best after the flavors have some time to meld.
