Creamy Keto Broccoli Gratin

This creamy, healthy, low carb broccoli gratin recipe turns any meal into a well rounded, low carb feast.

The savory cheese sauce is simple to make and perfect for “mixed” low carb and non-low-carb diners alike.

🥘Ingredients

  • 1 lb Broccoli * florets – fresh or frozen
  • 4 ounces cream cheese
  • 2 tbsp unsweetened almond milk
  • Two tablespoons of butter
  • 2 cloves garlic minced – or 1 tsp granulated powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/4 cup Parmesan cheese
  • 8 oz cheddar cheese

Optional Garnish

  • 6 slices bacon *Optional – Cooked Crispy and Chopped

I LOVE broccoli and bacon together! But if I am having a meat heavy dish I leave it out to lower the calories.

  • 3 green onions * optional – chopped
  • squeeze of lemon *cuts the bitter flavor of the broccoli

👨🏿‍🍳Instructions

  • Preheat oven to 425°F or 218°C. Prepare a casserole dish by oiling or buttering.
  • Fry bacon if using while you steam the broccoli florets for 2-3 minutes in a covered dish in the microwave on high. You don’t want the broccoli to get mushy, just steamed until bright green.
  • In a medium saucepan, combine garlic, cream cheese and almond milk over medium/low heat. Add spices and Parmesan cheese and stir to combine. DO NOT LET THIS MIXTURE BOIL! Stir in half of the shredded cheese and ¾ of the chopped crispy bacon pieces and mix until melted.
  • Once the cheese sauce is melted and uniform, turn off the heat and toss in the broccoli florets and squeeze of lemon if using. Stir to coat.
  • Transfer the broccoli to the prepared casserole dish and top with with the remaining cheddar cheese and bake covered for 20 minutes. Uncover and bake for another 5-10 minutes so the cheese can brown. Serve with chopped green onions for garnish.

Yes! But it’s best if you freeze it unbaked. Just follow the instructions up until it’s time to put it in the oven. Cover tightly and and freeze for up to two months for the best flavor.

Yes. It’s best when it’s fresh out of the oven but you can assemble and keep in the fridge for up to 24 hours before baking. Easy peasy.
