Keto Cheddar Broccoli Soup

This Low Carb Cheddar Broccoli Soup has been a family favorite for years.

It’s simple, easy to make and deliciously filling. We use sharp cheddar but you can use any cheese you like.

This is the perfect make ahead meal.

🥘Ingredients:

If you want to make your own chicken bone broth check out Natasha’s Kitchen for three easy ways to make it.

  • 3 cups broccoli Chopped into small pieces. Use a food processor to make this bit go faster or use frozen chopped broccoli (fastest).
  • 1 cup heavy whipping cream * Almond milk works but it will not be as creamy.

You can also swap out the heavy cream for 8 oz of cream cheese. This makes for a really creamy soup and is great for those who can’t tolerate heavy cream.

  • 3 cups shredded Cheddar cheese * Any kind you like. Sharp is our favorite.

I bet pepper-jack would be the bomb too!

  • 4 slices bacon * Optional- chopped and cooked

If I have bacon thawed out I always use it. Crispy chopped bacon sprinkled on top is amazing!

👨🏿‍🍳 How to make the soup:

  • Add butter, broth, broccoli and spices. Bring to a boil; simmer until broccoli is tender, about 15 minutes.
  • Add heavy cream & Cheddar cheese gradually. DO NOT BOIL ONCE YOU ADD CHEESE AND CREAM. Just a low simmer is enough.

If you boil the soup after you add the cheese you’ll get a grainy result.

  • Stir constantly, until completely melted. Season with salt and pepper to taste. If too thick add more cream. Too thin? Add more cheese.
  • Serve with optional toppings on the side.

I really like fresh parsley on the side. Chives and extra cheese for topping is always a hit. And an extra half cup of shredded Parmesan adds layers to the cheesy soup base.

Can I make this soup ahead?

Absolutely! It’ll keep in the fridge nicely for 4-5 days. Reheat in the microwave or on the stove-top but do not boil.

Can I freeze this soup?

Yes and no. You technically can freeze this soup but the texture will change once it’s thawed.

I have done it when I over estimated how much we could eat. But it’s not as good once it comes out of the freezer. The texture is watery and is not quite the same.

Can I use different cheeses?

Of course. I highly recommend experimentation.  Soup recipes are but a guide…right?

I doubt this soup needs any introduction. It will keep your Ketosis fires burning and it's a family favorite. Picky teen approved.

Ingredients
