It’s creamy delicious and only takes a few minutes to make.
Bonus: It’s free of all of the powder and flour thickeners…just dreamy, creamy cheese and whatever spices you decide to add.
🥘Ingredients:
- 2 cups Cheddar Cheese (8 oz) Shredded- Sharp Cheese makes an incredible sauce.
Any cheese will work. Experiment and use your favorite…I LOVE PEPPER-JACK cheese sauce too!
- 1/4 cup heavy whipping cream (4 tbsp)
You can use almond milk if you like but I don’t think it will come out as creamy if you skip the heavy whipping cream.
- 2 tbsp Unsweetened Cashew milk or any milk you like. More cream could be used too.
Cashew milk has a naturally complimentary flavor to cheese. And it’s a little thicker than almond milk. But any milk will work.
- 2 tbsp Butter
If you leave the butter out all will be fine but it gives the sauce a gorgeous rich flavor.
Optional add ins
- 1/4 tsp powdered garlic
- 1 tbsp Chopped parsley added after the heat is turned off
Parsley and black pepper are my favorite add ins.
Dill is amazing (and gorgeous in the sauce too).
- 1/4 tsp black pepper
👩🏻🍳 How to make the cheese sauce:
- Put everything in a sauce pan and heat on low/medium. Stir constantly with a whisk until thick and creamy. DO NOT BOIL. It will burn your cheese sauce.
- Add more milk if the sauce is too thick, more cheese if it is too thin.
- Serve hot over veggies or as a dip.

Can I make this sauce ahead of time?
Yes! It will last 4-5 days in the fridge. Don’t over heat it when you decide to use it or your cheese will burn.
Can I freeze this Keto Cheese Sauce?
You could but the texture won’t be as good the next time around.
If you decide to go ahead with it, thaw on the counter and reheat it on the stove.
It only takes ten minutes to make so make it fresh if you can.
Why does every recipe out there call for flour or xanthan gum when making cheese sauce?
I don’t know. We started doing it this way and never tried it without a thickener…that’s my best guess.

It is really easy and I am so glad that I’m no longer under the WRONG impression that I need any kind of thickener or cream cheese to make the perfect Keto Cheese Sauce.
Really, I stumbled upon this recipe because I just wanted to see what would happen without xanthan gum (which I don’t care for in sauce. It’s kinda slimy.)
I expected a runny, gloppy mess. Pre-Keto I always thickened cheese sauce with flour.
I was pleasantly surprised at how creamy and nice it came out without adding anything but the four ingredients listed.
I bet you could even skip the butter to lower the calories…but it makes it so nice and rich.
