Ultimate Keto Green Bean Casserole

The Low Carb Green Bean Casserole from scratch is one of my favorites! It screams of nostalgia without the carbs and chemicals from the canned cream soups.

It’s one of those easy sides that you can toss in the oven with the rest of your dinner.

It keeps well and you can make it ahead of time for busy weeknights too!

Served Low Carb Green Bean Casserole

🥘Ingredients:

  • 3 slices bacon – cooked crispy & diced

I think bacon counts as one of those “to taste” ingredients. It has low carbohydrates but contains a lot of calories….so, how many slices you use is up to you.

  • ¼ medium onion * Chopped- about 2 oz.
  • 1-2 cloves garlic minced – or about ¼ – ½ tsp dry garlic
  • 6 oz mushrooms – any kind you like. I used sliced buttons.
  • ½ cup chicken broth
  • 4 oz cream cheese – Softened and cubed. You can soften in the microwave if necessary.

You can use heavy cream if you like but this recipe contains a lot of dairy already.

  • ¼ cup Parmesan * or any cheese you like – shredded

Dry cheeses aren’t as gooey when they melt. But you could use any cheese you like.

  • Pepper – to taste
  • ½ lb Green Beans – Fresh & trimmed to 2 inch bite size pieces.

Optional toppings

  • Crushed pork rinds

This is a good option if you like pork rinds.

  • Additional shredded cheese
  • Sliced Onions

Traditional green bean casserole is topped with French Fried Onions. The can says 1 serving only contains 2 net carbs, but it’s a very small serving.

I don’t typically use them because this side is flavorful enough on it’s own.

But, if I am making this for Non-Low-Carb friends or family who feel nostalgic about them, I use them and just don’t eat them. Or, try not to eat them. Simple enough right?

👨🏿‍🍳How to make the Casserole:

1.) Preheat oven to 350°F or 177°C. Prepare a medium sized, oven safe baking dish with oil or butter.

2.) Trim fresh green beans to bite sized pieces while your salted stock pot comes to a boil. Blanch the green beans in the boiling water for 8 minutes until al dente but not mushy. They should bright green and still a wee bit crunchy.

3.) While the green beans are in the stock pot, fry the bacon in a large wok or large frying pan. Chop the garlic, onions and mushrooms while the bacon is frying.

You’ll need a large skillet for this. I LOVE this one.

4.) Remove the bacon and set aside to drain and cool.

5.) Use the same pan and the bacon grease to fry the garlic and onions until slightly translucent (2-3 minutes). Don’t let them brown (burnt garlic sucks).

6.) Add the mushrooms and saute for a couple of minutes. They will start releasing juices.

7.) Pour in the chicken broth, almond milk and cream cheese cubes and let just simmer until the cheese starts to melt. Keep stirring and don’t boil or it will be grainy. Add the Parmesan cheese and stir until melted and combined. Turn off heat.

This is a thick sauce and not like the soupy traditional recipe for green bean casserole. If you want it thinner, add more almond milk or chicken broth a bit at a time until its the best consistency for you.

8.) Chop bacon into small pieces and add back to the skillet and stir until they are mixed in.

Dump the green beans into the skillet and mix until combined.

Spoon into the prepared baking dish and add any desired toppings.

9.) Bake at 350°F or 177°C for 30-40 minutes until heated through. Serve hot.

You can keep this dish in the fridge for 5-7 days.

📋Tips & FAQ’s:

Can I use canned Green Beans?

Yep. But remember to drain them before deciding how many cans to use. The water weight is included on the can and I don’t know how much is left after draining them.

Can I use Frozen Green Beans for the casserole?

I have tried using frozen green beans and I’m not a fan of this because they were chewy. You certainly can use frozen green beans but it’s not the best way to go if you have another choice.
