Low Carb Alfredo Sauce Post(1)

The story of Alfredo tasrts about a hundred years ago in Rome….

Just kidding, I’m not going to tell the story of how this sauce came to be, where I first tasted it or why I love the twinkle of Christmas lights.

But, if you’re interested in that sort of thing you can find the story of how Alfredo Sauce came to be here.

🥘Ingredients:

  • ½ cup butter
  • 2 cloves garlic pressed

If you are using powdered garlic you’ll need about 1/2 teaspoon.

  • 4 ounces cream cheese – cut into cubes
  • 1 cup Heavy Whipping Cream

The heavy whipping cream is what will help this sauce thicken.

  • ½ cup Parmesan cheese – freshly grated is best

If you decide to use the powdered Parmesan cheese, omit the salt until you have tasted the sauce.

Fresh oregano isnt usually available where I live but use it if you have it…yum.

Black pepper is always “to taste”.

  • ¼ tsp salt – to taste

You can always just add these to the table and let everyone choose how much “kick” they want in their dish.

👩🏾‍🍳How to make the Alfredo Sauce:

  1. Melt butter over medium heat in a medium saucepan.

Add the pressed garlic and sauté for 20 seconds or until until fragrant. Don’t allow to get black.

If you are using powdered garlic, wait until you add the other spices to stir the garlic in.

  • Add the whipping cream and cream cheese.

Whisk constantly until smooth. Don’t allow to boil. Gradually add the Parmesan cheese while continuing to whisk.

3. Add the oregano, pepper and salt. Whisk to combine.

Simmer for about 1 minute to allow the flavors to meld; do not let it boil. Taste for seasoning and add more salt and pepper if needed.

4. Remove from the heat and serve.

5. Store leftovers in an airtight container in the refrigerator for up to 4 days.

 📋Tips & FAQ’s:

My Alfredo sauce is too thin!

Simmer for a bit longer to evaporate some of the liquid. Or, add a bit more cream cheese.

My low carb Alfredo Sauce is too thick!

Add more heavy whipping cream, a tablespoon at a time until it’s the right consistency.

Can I make this low carb Alfredo Sauce recipe ahead of time?

Yes, this sauce will keep for about four days in the fridge.

If you are making a big holiday dinner, this is the perfect recipe to make a day ahead of time.

Can I freeze the leftovers and use this sauce later?

No. It’ll be separated and weird when you thaw it out.

Try to find alternative ways to use the leftovers.

If I make this for “mixed” non Keto company, I just boil some linguine and make zoodles so that everyone can choose what they like.

Peel the zucchini before making them into zoodles if you are adverse to the strong taste of the skins.

I have discovered that this makes a huge difference in the presentation too…if you’re into that.

What can I use this sauce on?

I have been dying for some good Alfredo sauce that I can have with my new diabetes diagnosis. This sauce was thick and creamy without the flour that I have always used to thicken it. You guys are a godsend. Thanks!

This Alfredo sauce was so easy and delicious! I had it on top of chicken and left out the zoodles because I just can’t get used to them. Alfredo sauce is a must have at our house during the holidays and I my go to recipe has a lot of flour in it. Thank you for making this doable for my family this year.
