Easy Keto Beef Stroganoff

As the season cools off and we're all looking for comfort food, Keto Beef Stroganoff can be a great option.

The classic dish typically includes rice or egg noodles, but this keto-friendly version swaps those ingredients for riced cauliflower or Shiritaki Noodles .

It's also an easy way to sneak in some extra veggies!

Keto Beef Stroganoff is an easy meal to make ahead if you run short on time during weeknights. But it comes together so quickly that most people don't need to make it ahead of time.

This was inspired by my Bechamel Portuguese Pork Chops, and pairs well with this Shredded Air Fryer Brussel Sprouts Side Dish.

Ingredients

You can use either sliced beef, ground beef or beef chunks, just depending on your preference. I use whatever organic beef is on sale because I'm cheap and I like all of the Keto Beef Stoganoff versions.

Sliced Raw Beef for an example
  • Butter
  • Beef
  • Fresh mushrooms - any kind, sliced
  • Fresh Garlic
  • Beef broth
  • Cream Cheese
  • Sour cream
  • Worcestershire sauce
  • Dijon mustard
  • Paprika
  • Salt and Pepper to taste

Instructions

Start with choosing what type of beef you'll use and move on from there.

Ground Beef as an example of what to use
  • Heat a large skillet over medium-high and melt 1 tablespoon of butter. Add beef and season with salt and pepper to taste. Cook beef, stirring occasionally, until cooked through, about 10 minutes. Transfer to a bowl.
  • Return skillet to medium-high heat and add remaining butter and mushrooms. Cook, tossing occasionally, until mushrooms are slightly cooked (not slimy), about 5 minutes. Season with salt and pepper and add garlic. Cook until fragrant, then add broth, cream cheese, sour cream, Worcestershire, Dijon, and paprika to skillet. Bring to a simmer and stir occasionally.
  • Return beef to skillet and stir to combine. Serve over cauliflower rice or shiritaki noodles.

Hint: you can add more broth or cream cheese to adjust the thickness of the sauce.

Substitutions

Switch up this recipe with ground lamb, elk or sliced chicken. Skip the fish, that's just weird lol.

Variations

You can change the flavor profile by adding a few simple ingredients.

  • Spicy - add red chili pepper flakes while cooking to imbue heat into the Beef Stroganoff.
  • Deluxe - add bacon to give the traditional flavor a lil somethin' somethin'.
  • Kid friendly - Make egg noodles for your kids so that they don't complain about the cauliflower rice. This dish is a win/win.

Equipment

You don't really need any special equipment to make this dish. A good cast iron pan makes cooking and serving it easy though.

Storage

You can store leftovers (if there are any) in the fridge for a few days easy.

Top tip

Once you add the cream cheese and sour cream be very careful to just bring the sauce to a simmer. DON'T BOIL it or it will get grainy.

Ingredients
  

  • 3 tbsp. butter divided

  • 16 oz Fresh mushrooms sliced
  • 1 garlic clove minced
  • ½ - 1 cup beef broth To liking to adjust thickness.
  • 4 oz. cream cheese
  • ½ cup sour cream
  • 2 tsp. Worcestershire sauce
  • 1 tsp. Dijon mustard
  • ½ tsp. paprika
  • salt and pepper to taste

Garnish - Optional

  • parsley
  • chopped green onion or chives

  • Wash hands after touching raw meat
