Grilled Lamb Loin Chops

Want to know how to grill the perfect lamb chops every time? It’s easier than you think. Lamb loin chops, shoulder chops or rib chops will all work with this garlic and lemon infused recipe.
This recipe was inspired by my slow cooked Mediterranean Lamb Recipe. While the two recipes create different flavor profiles for the same type of protein, they are both Lamb…which I am obsessed with right now.
Ingredients
- 1 pound Lamb Loin Chops 4 chops – this will work on any chops if you can’t find loin chops.
- 2 cloves garlic
- ¼ cup olive oil
- 1 tsp thyme
- salt to taste
- pepper
- ½ lemon
How to make the Loin Chops:
- Mix the garlic and thyme into the olive oil.
- Liberally salt and pepper the chops on all sides and lay flat on a plate. Drizzle the olive oil on both sides and allow to come to room temp (30-40 minutes).
- Heat your grill to medium/high heat and place the chops and the lemon half on the grill. Grill chops on each side for 3-4 minutes until an internal temp reaches at least 130- 135F for medium rare. Squeeze the grilled (hot) lemon over your chops with tongs before transfering to a plate.Tip: Grill the sides for a couple of minutes too if your chops are extra thick.
- Remove from the grill and tent with foil for about 10 minutes to rest. Serve.See post for serving suggestions.
Tips & FAQ’s:
Here’s the secret to tender lamb chops; Set a timer for three minutes per side. Don’t try to “eyeball” grilled lamb or it’ll get overdone every time.
And, use a meat thermometer. You don’t have to eat your lamb rare but if the lamb chops are cooked to “well done” it gets chewy. 135F-145F is best.
The final secret – make sure you use enough salt. Without salt lamb tends to have that gamey taste I hear people complain about. ( I was a confirmed lamb hater until I discovered this trick).
