Steamy, creamy, comforting Beef Stroganoff combines ground beef, fresh veggies and savory herbs to tempt the whole family. This is an easy Low Carb meal that can be served with cauliflower rice, shiritaki noodles or the higher carb alternative for your "non-Keto" family members. It's a win/win.

16ozFresh mushroomssliced
1garlic cloveminced
½ - 1cupbeef brothTo liking to adjust thickness.
4oz.cream cheese
1/2cupsour cream
2tsp.Worcestershire sauce
1tsp.Dijon mustard
1/2tsp.paprika
salt and pepper to taste
Garnish - Optional
parsley
chopped green onion or chives
Instructions
Heat a large skillet over medium-high and melt 1 tablespoon of butter. Add beef and season with salt and pepper to taste. Cook beef, stirring occasionally, until cooked through, about 10 minutes. Transfer to a bowl
Return skillet to medium-high heat and add remaining butter and mushrooms. Cook, tossing occasionally, until mushrooms are slightly cooked (not slimy), about 5 minutes. Season with salt and pepper and add garlic. Cook until fragrant, then add broth, cream cheese, sour cream, Worcestershire, Dijon, and paprika to skillet. Bring to a simmer and stir occasionally.
Return beef to skillet and stir to combine. Serve over cauliflower rice or shiritaki noodles. See post for other serving suggestions.
