Charred on the surface and warm and pink in the center. These grilled lamb loin chops are grilled to perfection and infused with a garlic and lemon marinade. This is the perfect way to enjoy lamb on a hot Summer day.
Liberally salt and pepper the chops on all sides and lay flat on a plate. Drizzle the olive oil on both sides and allow to come to room temp (30-40 minutes).
Heat your grill to medium/high heat and place the chops and the lemon half on the grill. Grill chops on each side for 3 minutes until an internal temp reaches at least 130- 135F for medium rare. Squeeze the grilled (hot) lemon over your chops with tongs before transferring to a plate.Tip: Grill the sides for a couple of minutes too if your chops are extra thick.
Remove from the grill and tent with foil for about 10 minutes to rest. Serve.See post for serving suggestions.
