Move over, chocolate chip cookies! These keto peanut butter cookies are about to become your new go-to treat. Made with just three ingredients, they're quick and easy to whip up – and they're oh-so delicious. So go ahead and indulge – we promise, you won't regret it!

There are only three ingredients and this recipe produces a sort of shortbread type of cookie, rather than a cakey texture. YUM!

This was inspired by my LOVE of Peanut Butter. We actually have a BUNCH of Peanut Butter Recipes on this site and most of them are super duper easy.

But, I wanted something simple and delicious to serve after a fantastic Grilled Lamb Chop Dinner.

Ingredients

Use the best natural, unsweetened peanut butter you can find for this recipe since the outcome will be dependent on this factor. Since there are only three ingredients, let them be fantastic! Right?

  • Sugar free peanut butter - see substitutions for alternatives
  • Allulose * or sweetener of choice
  • Eggs - ROOM TEMPERATURE * see substitutions for egg free options
  • Vanilla Extract

Instructions

Are you ready? The instructions are a breeze.....

  1. Preheat the oven to 350F and line your cookie sheet with parchment paper.
  2. In a large mixing bowl, combine all your ingredients and mix until completely combined and smooth.
  3. Form 12 even-ish balls of cookie dough with a cookie scoop or a spoon and place on the pan. Press each cookie down with a fork to the signature criss cross on top. Bake cookies for 11-13 minutes, or until golden around the edges.
  4. Remove from the oven and let cool completely before enjoying. See "storage" for storage tips.

Hint: Line your pans with parchment whenever you bake to avoid broken cookies (and the subsequent broken heart).

Substitutions

I know, I know, even people with peanut & egg allergies love cookies so here you go...

  • Peanut butter - To make peanut free cookies use the same amount of Sun-butter, Almond Butter or any other type of seed butter.
  • Egg - for an egg free - vegetarian option use 4 tablespoon of Chia Seeds.

Variations

You can switch up this easy Keto cookie recipe to make them special.

  • Chocolaty - add a handful sugar free chocolate chips like Lily's
  • Deluxe - add chopped peanuts to add to the peanutty flavor.
  • Fancy - drizzle melted sugar free chocolate and sprinkle on the chopped peanuts.

Storage

Store the Keto Peanut Butter Cookies in an air tight container for up to two weeks or freeze to keep for six months. (Who does this?) They'll never last this long.

Top tips

Do not over-bake or your cookie's will literally crumble...

If you use salt free - natural peanut butter you'll need to add salt to taste or the cookies will taste like the jar they came in. (Yes, taste the batter).
