Keto Fudgy Brownie Bites Recipe

These Keto Fudgy Brownie bites land somewhere between candy and brownies.
The rich chocolatey candies are smooth and delectable….and won’t kick you out of Ketosis.

Plus, you can make your own version and customize YOUR candy to YOUR own tastes. Keep them on hand and never fall prey to chocolate cravings.
Keto Fudgy Brownie Bites Ingredients:
- 1/4 cup butter
If you want to use coconut oil instead just remember to add another 1/4 tsp of salt.
- 1 oz cocoa butter
This ingredient might not already be in your pantry but it should be!

Just make sure that you buy food grade cocoa butter like this one.
- 1 tsp vanilla extract
- 1/4 tsp salt
- 4 tbsp Unsweetened Cocoa powder *If you like dark chocolate you can add another tbsp.
- 1/3 cup Allulose or sweetener of choice

- 2 tbsp heavy cream
- 1/3 cup peanut butter natural and no sugar
Natural, no sugar added peanut butter is perfect for the Keto way of eating. And, there is another great choice available now with added MCT oils too.
- 1/4 cup chopped nuts *optional- use whatever you like.
Walnuts are the traditional choice for brownies but I love these rolled in roasted almonds and peanuts too.
Unsweetened cocoa powder or unsweetened coconut are a great choices too. One of the things I love most about the Keto Lifestyle is how easy it is to customize to my tastes.
It’s probably the single most prevalent reason that we have been able to make this “diet” a lifestyle.
Instructions to make the Keto Fudgy Brownie Bites:
- In a microwave safe bowl, melt butter and cocoa butter together in 30 second intervals. Stir in between intervals.
If there’s one step you follow in the whole recipe…let it be this one. It’ll make a huge mess if you let the butter pop in your microwave.
- Whisk in the cocoa powder, sweetener, vanilla extract and salt. The mixture should be thin.
- Add the cream and whisk briskly until the mixture thickens. It should get thick. It should be the consistency of thick chocolate frosting.
You can use a hand mixer if you like, but only use a single beater so that you don’t end up wasting too much of the chocolate…
- Use a rubber spatula or wooden spoon to stir in the peanut butter into the mixture until it is completely combined and resembles dough.
It should be a thicker consistency once you get the peanut butter mixed in.
You can always use almond or sun-butter if preferred.
- Roll into 16 balls (about 1 inch each) and roll in nuts.
- Place in the fridge until firm and enjoy.
- Keep in the fridge for up to a week in an airtight container. Freeze if you will be keeping them longer.
Since they are so fudge like, it’s best to keep them cold or at least cool so they don’t melt.
