Almond Butter Cookies Ingredients:
- Natural almond butter
- Vanilla extract
- Egg
- coconut flour
- Allulose (or Sweetener of choice)
- baking powder
- salt
- Sugar free chocolate chips (optional)
Use the dark chocolate baking chips if you need to keep this recipe dairy free.
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large mixing bowl, add almond butter, egg, vanilla extract, coconut flour, allulose, baking powder, and salt. Stir until well combined.
3. Gently fold in chocolate chips.
4. Scoop dough with a small cookie scoop onto a baking sheet lined with parchment paper.
If you don’t have a cookie scoop, GET ONE. Or use a tablespoon and your finger to make balls. Then slightly flatten the cookie dough balls with the back of a spoon or use a fork to make a criss cross pattern if you want to make them pretty.

5. Bake in the oven for 10-12 minutes, or until your almond butter cookies are golden brown. Let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Why are my almond butter cookies crumbly?
If your almond flour cookies are crumbly, it’s likely because you’ve used too much flour. When measuring the coconut flour, make sure to spoon it into the cup and level it off with the back of a knife. Do not pack it into the cup or scoop it out with your measuring cup, as this will result in using too much flour in your cookie batter.
Also, make sure to cool the Keto Almond Butter Cookies completely. Keto baked goods- especially a gluten free recipe like this one is very delicate while warm.

I do not recommend using a different type of flour for this almond butter cookies recipe. Coconut flour is very absorbent and using a different flour will result in a dry, crumbly cookie.
Almond flour doesn’t absorb liquid at all.

Can I use a different sweetener?
Yes, you can use a different type of granulated sweetener in this almond butter cookies recipe.
However, keep in mind that allulose is a one-to-one replacement for sugar, so if you use a different sweetener, you may need to adjust the amount. If all you have a is a low carb Powdered sweetener, you might need to use less too.
If you use liquid stevia, your cookies will not be quite as crisp. This goes for ALL keto cookie recipes.
Also, keep in mind that sugar alcohol can upset your stomach. If Allulose is unavailable where you live, try using a monk fruit blend to keep the erythritol to a minimum.
Is almond butter better than peanut butter for keto recipes?
There is no definitive answer, as it depends on your individual dietary needs and preferences. However, almond butter does have a few benefits over peanut butter.
Almond butter is lower in net carbs and higher in healthy fats and protein, making it a good option for those on a ketogenic diet. I have stopped eating peanut butter recently to see if it was true for me and I have lost some “inflammation weight” and feel better too. This isn’t true for everyone, I had a serious peanut butter addition. Just look at all of the peanut butter recipes I created over the years.
But, this change also happened the same time that I went dairy free.

What can I substitute almond butter with in this recipe?
If you are not a fan of almond butter, you can substitute another nut butter of your choice. Just keep in mind that the nutritional information and net carbs will vary slightly depending on which nut butter you use.
You can use Sun butter in place of almond butter in this recipe.Sun butter is a great option for those with nut allergies or who are looking for a lower-fat alternative to almond butter.
You can use cashew butter or peanut butter.

What are the Best Sugar Free Chocolate Chips?
There are a few different brands of sugar free chocolate chips that I like to use in my baking. My favorites are Lily’s Sweets and Hu Kitchen Gems. Both of these brands are keto-friendly and taste great in cookies, cakes, and other desserts.
My Cookies are flat!
Make sure you preheat the oven before baking. Nut Butter has a lot of fat in it and if the oven isn’t preheated the fat will “run out” of the cookie and be dry and flat.
My Keto Cookies are stuck to the Cookie Sheet!
Do not skip preparing the baking sheet with Parchment Paper. Keto cookie dough is notorious for sticking to the cookie sheet and a prepared baking sheet is your only defense.
How can I switch up the Keto Almond Butter Cookies?

To make double the Keto almond butter cookies, simply double all of the ingredients listed in the recipe. Once you have mixed everything together, the dough will be enough to make 24 cookies. You can either bake all of the cookies at once, or freeze one half of the dough for later use.

How can I make these Keto Almond Butter Cookies Paleo AND low carb?
The egg in the recipe is not Paleo friendly. You can swap it out for a tablespoon of chia seeds – or just leave it out.
The almond butter will bind your almond butter cookies without it. I just like the flavor and texture it gives to the almond butter cookies.

- 1/4 cup Allulose or Sweetener of choice
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sugar free chocolate chips optional

- Preheat oven to 350 degrees F.
