Keto Spicy Sausage Bites

A great recipe in the CITM tradition – easy, healthy and delicious.

Only four ingredients – nothing fancy – meat, cheese, water and eggs.

Put the stuff in a bowl, mix it, roll it and put in in the oven.

Makes a great appetizer if you need something for a party. You just can’t go wrong with these spicy sausage balls.

Even non-Keto folks can enjoy one or two with a cold cerveza.

And you low carb folks can have them with any number of Keto friendly adult beverages.

Spicy Sausage Bites Recipe Tips

This is one of the easiest recipes ever, so I don’t have too much to make it easier.

Literally all you have to do mix them, roll them and put them in the oven. The only recipe that may be easier is the Keto Reuban Casserole.

Use a baking pan instead of a baking sheet:

There will be enough oil that is cooked out of your spicy sausage bites, that if you cooked it on a cookie sheet it would run off the edge and make a terrible mess in your oven and probably set off the smoke alarm.

I’m telling you this because I just about made this mistake myself. 

I had them all arranged just-so on the parchment on the cookie sheet, and was just about to put them in the oven when Bran pointed out the error in my plan.

So I transferred them to a pan with sides and I’m ever so glad that I did.

Keto Spicy Sausage Bites cooked in Pan

Don’t be too concerned with over cooking them: 

If they get a little crispy on the outside, they’re awesome that way too.

The instructions say that you should bake them for 22 minutes at 375° F, if you let them bake for 24 minutes they will be a little crispier.

Make your Spicy Sausage Bites into even Spicier Sausage Bites:

The hot sausage is just not hot enough to make my mouth tingle.

When I made these I added some red pepper flakes.-about a teaspoon works for me. But they came out pretty spicy.

Use the powdery Parmesan:

There is fancy freshly grated Parmesan that comes in a cup, and then there is the powdery kind that comes in a jar with a shaker top.

For this recipe the kind in the jar is better. Not only because it is less expensive, but also because it is dryer, and will absorb more of the fat from the sausage along with all the deliciousness that goes with it.

The type of cheese is just a suggestion

My favorite reminder, this is your food, and you should make it how you like.

If you prefer milder cheeses, by-all-means use milder cheeses.

A couple things about that:  milder cheeses like mozzarella and monterey jack have more moisture than sharp cheddar and Parmesan, so you may want to either use a little less water or bake your spicy sausage bites a little longer.

Spicy Sausage Bites Serving Suggestions

Breakfast:

I usually don’t eat breakfast – intermittent fasting and all – but on the day I made these I fried a couple of eggs to go with them. 

It brought back fond memories of my breakfast eating days. 

New plan – breakfast at 3:00pm, but if you are a breakfast eater these will be great either by themselves or with some eggs or avocados or some such.

And especially if you are looking for a grab-go-kind of breakfast, you can make Spicy Sausage Bites ahead of time so they’re ready to go when you are.

They microwave nicely.

Party Food/ Appetizer: 

The Spicy Sausage Bites, are a great choice if you need something to serve as an app or take to a party, you might even enjoy them while watching football – Go Broncos!!!

If you are going to make them for such a purpose you may want to make them smaller and don’t cook them quite as long.

If you make 24 spicy sausage balls, they will be about 1-1/2″ in diameter.

If you make 48 of them it will be a better size for hors-d’oevoures and you can eat them with a toothpick.

The Absolute Ultimate Sausage & Egg Sandwich:

The cheesy spiciness will make an eggcellent breakfast sandwich ( see what I did there?).

Instead of making 24 sausage balls, make 8 and then flatten a little wider than a  burger bun because they will shrink while cooking.

Then bake them for about 15 minutes.

Then you put them on the bun, add some lettuce, tomatoes and a fried egg – whatever you like.

Mixing Bowl

Ingredients
  

  • 1/2 cup Parmesan
  • 1-1/2 cup grated sharp cheddar
  • 1 lb hot Sausage
  • 1 egg
  • 2 tbsp Water

Instructions
 

  • Preheat oven to 375° F
  • Put all ingredients in a large mixing bowl.
  • Mix until thoroughly combined.
  • Roll mixture into 24 balls and put on parchment covered baking tray.
  • Bake for 22 minutes or so. Check out the tips in the post to make some special additions or perfect hors d'oeuvres

    I made these for a finger food pot luck, b/c too often the offerings are very “carby”. These were a huge hit and people kept asking who made them and what was in them. Interesting observation: everyone who asked was a guy. Coincidence? I don’t know. At any rate these were so delicious I’ll be making them again. I DID use hot sausage and though there was a bit of ZIP to it, it wasn’t too hot at all. So simple!
