This Icy Keto Classic Vanilla Shake takes about five minutes to make and only requires four ingredients.

The best classic desserts are made with a few quality ingredients and this fits that bill. It's satisfying and embodies the taste of home, comfort and the simplicity of lazy Summer days.

The Keto Classic Vanilla Shake Ingredients:

  • 1 cup unsweetened almond milk

You could use coconut milk if you like the flavor but I find that almond milk keeps the vanilla flavor true.

  • 1 Cup Heavy Cream
  • 2 teaspoon vanilla extract

Less is more when it comes to vanilla extract and creations that you won't be baking or cooking. If you add too much vanilla it will end up tasting "boozy" because you won't be cooking this.

Vanilla is made with alcohol and if it isn't heated, the alcohol won't cook out.

I fully realized this problem after sending some vanilla whipped cream to school with my "then" 6th grader.

I had used a heavy hand (and of course didn't taste it that day), only to get a call from a friend who worked at the school letting me know that my child smelled a little "boozy".

My face gets red just thinking about it.

So, unless you want a boozy drink, don't add much more vanilla than is listed in the recipe.

If you do want it to be boozy, I'd suggest some vodka or something similar.

  • ¼ cup Erythritol ~Powdered

I use the monk-fruit blend because I think it taste more like real sugar than erythritol alone.

  • 1 cup ice cubes 5-6 ice cubes. You really can't "overdo" ice.

 The Keto Classic Vanilla Shake Instructions:

  • Place the ingredients into a blender and blitz until smooth.
  • Pour into a tall glass and enjoy.

Optional Toppings~

  • Keto Whipped Cream
  • Cinnamon
  • Nutmeg
  • Low Carb Chocolate Syrup
  • Sugar Free Caramel Syrup by Gnom-Gnom (another favorite Keto Blog of mine).
