This dreamy Strawberry & Key Lime Creamsicles recipe is loaded with the Summertime flavors of luscious strawberries and zesty limes. They're low carb and the perfect refreshing treat for Keto, Paleo and Banting Diets.

The pops have a creamy texture and just a hint of coconut. And, my favorite part is that they are so easy to make. The most difficult part of the whole process is going to be waiting for them to freeze.

The ingredients are healthy, whole foods and the creamsicles are guilt free so let's get started...

Gather up your ingredients:

If you have ever read ANY of the recipes that I have written, I always recommend gathering up all of your ingredients first. It's more difficult to forget something if everything you need is in one place.

Plus, it makes cooking more enjoyable.

  • Blend the lime juice, berries and sweetener first.

This will help to get the smooth consistency that you are looking for in your creamsicle.

I am pretty sure that this formula will work with any berry that you want to use. The nutritional information might be a little different but that's easy enough to track.

Try blueberries, raspberries or a mixed bag. As brutal as last winter was I am thinking that we may have a long hot Summer as well and we all know that variety equals success with the Keto Diet...or any diet for that matter.

Either fresh or frozen berries will work. I happened to have some sweet ripe strawberries on hand when I decided to make this post so I used those.

But, I generally prefer to use frozen berries for cooking, baking and creating so that we can enjoy the fresh berries with cream or in this succulent shortcake recipe.

Or in this chocolate covered strawberry recipe...OMG these sumptuous little treats are perfect for date night and will make anyone who is lucky enough to share them with you feel special.

  • Slightly melt the cream cheese and coconut oil together in the microwave or on the stove top.

When you blitz the cream cheese coconut oil and strawberry mixture together you want it to get to a nice consistent texture.

This will make your ice cream bars taste and feel like ice cream bars melting on the tip of your tongue.

  • Blend on high until the color and texture is consistent.

Look at that gorgeous pink color. Feel free to taste test your concoction and add more lime or sweetener as desired.

If you aren't going to be sharing these with little's you can add a splash of vodka if that's your thing.

This is really all about how you want your treat to taste.

One of the best things about this sugar free, Keto Popsicle recipe is the versatility. I actually have poured this recipe into small candy molds ( like these) and eaten them straight out of the freezer like little frozen fat bombs/ ice cream bites.

Don't worry, both Keto Ice Cream recipes are easy and no churn. They only take a few minutes of prep time and keep well too.

  • Pour the mixture into your Popsicle mold.

This recipe was developed for three ounce Popsicle molds and the recipe makes six at a time. I love this one and its dishwasher safe.

I am in the kitchen A LOT and I don't need anything else that is "hand wash" only.

  • These usually harden in 2-3 hours depending on how cold your freezer is.

My freezer happens to be approximately the same temperature as Siberia in the Winter, in the dark. So about two hours is enough.

I hope that you enjoy these as much as we did. This recipe is pretty simple...and sometimes that's best when you are talking about fresh berries.

Ingredients
 
 

  • 12 oz strawberries fresh or frozen
  • 4 oz Cream Cheese warmed
  • ¼ cup Coconut Oil warmed
  • ¼ cup allulose *to taste
  • 1 tablespoon Lime Juice Fresh is best

Optional

  • 1 teaspoon almond or vanilla extract

Instructions
 

  • Blitz berries, erythritol ( or desired sweetener) and lime juice in the blender until smooth.

  • Warm the cream cheese and coconut oil slightly in the microwave or stovetop.

  • Add oil and cream cheese to the blender and blitz until smooth.
  • Pour into your molds and freeze until hard. 2-3 hours should do it.

  • Store in the freezer and enjoy whenever you like.
