- Put the heavy cream in a bowl, and beat it until stiff peaks form.
- Use another separate bowl to mix the mayo, mustard, allulose, and tarragon well. Then fold gently into the whipped cream until just blended and refrigerate until ready to serve.
Pan fry the Mahi Mahi
- Season the fillets with salt and pepper.
- Heat a frying pan and butter over medium heat until hot and the butter bubbles. Sear the Mahi Mahi filets for about two minutes on each side.
Don’t be tempted for cook the delicate fillets for much longer or they will dry out.
- Place the fish fillets on a warm plate and dollop with sweet mustard cream sauce. Serve any extra sauce on the side.
