This No Bake Keto Low Carb Strawberry Lemonade Tart tastes like Summer and I couldn’t be more ready. And, this won’t knock you out of Ketosis, so you can feel great about making it.

There are ZERO weird “Keto” thickening powders or complicated steps.

This refreshing tart is really popular in the Summertime and I was inspired to make it after my family went crazy for these Key Lime Cheesecake bites.

🥘Ingredients

Lemon Curd Ingredients

  • 1 cup lemon juice about 4-5 lemons squeezed to death.

I used 5 small organic lemons and they came to EXACTLY one cup of juice.

  • 2-3 tbsp lemon zest * to taste -from the same lemons that you squeezed

Wash the skins really well before you start zesting.

  • 5 large eggs

NOTE: If you use erythritol or another sweetener this may not thicken as well.

  • 4 tablespoons butter * chilled-cut into small pieces to help the melting process.

Berry Topping

  • ½ lb Strawberries * sliced thin

The Almond Flour Crust Base

Mix the vanilla right into the melted butter for better continuity of vanilla flavor.

👨🏿‍🍳How to make the Strawberry Lemonade Tart:

Lemon Curd – Make this first

  • Whisk lemon juice, lemon zest, eggs, and allulose in a cold medium sized sauce pan. Forget what you know about tempering eggs. Start whisking and slowly heat on medium/low heat until the mix gets thick enough to coat the back of a spoon. Don’t stop whisking and make sure your getting around the edge of the pot too.

This takes me about 10 minutes of whisking.

  • Remove pan from heat and stir in butter. Once melted, vanilla, and salt. If the curd didn’t thicken enough to your liking, simply return to heat and cook a bit longer, stirring constantly (don’t stop), until it thickens enough to coat the spoon. It will thicken slightly in the fridge.
  • Taste for sweetness and adjust if needed.

The lemon curd will start cooling while you make your crust and this is just fine. You don’t want it to get cold though.

The Crust Base

  • Lightly toast almond flour in a dry skillet or pan over medium heat, until golden (2-4 minutes). Don’t skip this step!

Why? Because it’s and easy step that makes a big difference in taste.

  • Spoon toasted almond flour to a large mixing bowl and mix in Allulose, cinnamon and salt.
  • Add in melted butter and extract, mix until thoroughly combined. (it will seem dry at first. Keep Mixing and don’t add more butter or oil.)
  • Spoon almond mixture into your tart pan and press it into the bottom and slightly up the sides with the back of a spoon.

I used an 11 inch cheesecake pan because my tart pan was given away recently because I “never” used it. Ugh. The cheesecake pan worked out great though.

My giant pan made for a very thin tart. But thin tarts are ready faster so I was cool with it.

  • Spoon the lemon curd onto the top of the crust and smooth over. Chill for at least 2 hours or until cold set and arrange the sliced strawberries over the top if using.
  • Serve cold as is, or with low carb whipped cream if desired.

Is this really a no bake tart recipe?

Yes. Almond flour is just ground almonds so it doesn’t need to baked like regular flour in this recipe. The melted butter will bind the crust as it chills.

Can I freeze this Strawberry Lemonade Tart?

But why? I’m not sure. I think it would be fine but it’s so amazing fresh. If you want a smaller tart just use the slider in the recipe card to cut it in half and use a six inch tart or cheesecake pan. Easy peasy.

Use three eggs not 2.5 eggs and it’ll be fantastic!

You can use a tart pan or a cheesecake pan to make this dessert. A larger pan will result in a thin tart. A small pan will be much thicker. I used an 11 inch cheesecake pan.
