Peanut butter, Chocolate and then more chocolate – What could be better? Oh…I know how about the fact that these super easy Keto no-bake cookies are all that plus they’re Keto, low-carb and gluten free.
Chocolate & PB no-bake are a much different kind of delight than the Lemon Shortbread Cookies.
This is a little more like a candy bar. I would say like Reese’s, but with the coconut they have a different texture, a more rustic kind of thing.
How about this if you are still on the fence about making them, they are like Grandma’s peanut butter fudge with coconut flakes.
Super Easy Keto No-Bake Cookies are yet another affirmation that you can have dessert – really good dessert – on the Keto diet.
So if you like your sweets more like the county fair than tea with the queen these Super Easy Keto No-Bake Cookies might be just your game.
Let’s get started.
Here they are, just six ingredients – Nothing too fancy. Just really good stuff.
Basically all you do is mix them up, make them into cookie size and put them in the freezer for a few minutes.
Recipe Tip: Chocolate Chips
Lily Chocolate chips really bring this recipe together and give them that over-the-top delightfulness.
The Lilys chocolate keto chips that I use and the ones that I recommend are Lily’s all natural dark chocolate premium baking chips.
There are others that Hershey’s make some but they are sweetened with maltitol – in fact maltitol is the first ingredient – maltitol is not very well tolerated digestively and does cause an insulin response.

There are other’s too, they tend to be more expensive for the same ingredients.
If you don’t want to spend the money for the Lily’s Chocolate Chips you have a couple other options.
One option if you like it not-so-sweet are cacao nibs, which are essentially just bakers chocolate (ie. chocolate with no sweetener) shredded into little chips. I kind of like these, but Ada & Brandy – not so much.
The other option you have if you is that you can make your Super Easy Keto No-bake Cookies without the chocolate chips.
They will be pretty good and still pretty chocolatey because of the cocoa powder – but you may want to add a little extra shredded coconut.
Recipe Tip: New Jar of Peanut Butter
Other peanut butters like Jif and Skippy are full of sugar and some of what I call “tortured oils” which aren’t very good for you.
The problem with using natural peanut butter in you Super Easy No-bake cookies is that even if you do your best to mix it thoroughly, the first part of the jar will have a lot more oil, and the last part of the jar will be more dry.
Everything would work oh so well if we could always be in the middle of the jar but you can’t.
So here’s what you can do to make your cookies turn out perfect.
If you are just opening the jar add a little extra coconut, it will soak up some of the extra oil and make your cookies firmer.
If you are at the bottom of the where the PB is lacking oil, add an extra half tablespoon of butter.
Easy keto desserts no bake chocolate Chip Cookies Storage:
I know you might want to eat them all as soon as you get them out of the freezer – I know that’s what I wanted to do.
But you can’t do that because that would 2136 calories and even with the beautiful Keto lifestyle ~ calories matter.
So you will have to store them.
They will need to be in an airtight container in either the fridge or the freezer.
I recommend the freezer because they get sticky and soft pretty quickly when you take them out of the cold, and if you put them in the freezer you have a little longer.

Super Easy No-bake Cookies ( Peanut Butter & Chocolate)
- Melt the butter in the microwave. (use a microwave safe dish)
- To a large mixing bowl – like the one a Kitchen Aid – ad peanut butter, melted butter, cocoa powder and erythritol then mix until smooth.
- Add the shredded coconut and chocolate chips and mix thoroughly,
- In tablespoon size scoops spoon onto a sheet of parchment (will be 24 cookies)
- Put in the Freezer for 20 minutes.
- Enjoy now or store in the fridge in an airtight container
