This naturally low carb Jalapeno Artichoke Dip is a fantastic snack with veggies, low carb crackers and chips. It only takes ten minutes to make and is going to be a hit this Summer. It tastes like the Costco Jalapeno Artichoke Dip without the preservatives or hefty price tag….

Low Carb Artichoke Jalapeno dip with Hilo Chips

🥘Ingredients

  • 14 oz artichoke hearts marinated in oil
  • 1-2 jalapenos * whole – depending on how spicy you want your dip.
  • 4 oz cream cheese softened
  • ⅓ cup mayonnaise
  • ½ cup Parmesan grated
  • salt & pepper to taste

👩🏾‍🍳How to Make the Jalapeno Dip:

  • Drain artichokes and add to a blender or food processor with the jalapenos (stems removed). Pulse until roughly chopped. My peppers were leftover from Pad Thai night and already sliced. (You can do all of this by hand if you want).
  • Scrape into a mixing bowl with the rest of the ingredients and mix until completely combined. Taste and adjust seasonings if needed.
  • Serve with veggies, low carb crackers or chips.

Can I make the Dip ahead of time?

Yes! And it improves in flavor as it chills. It should last for 3-4 days easily in the fridge.

    I added more black pepper but followed the recipe EXACTLY otherwise and it was fantastic. Costco is going to lose money because of this recipe lol.
