We’ve all been there. You wake up ravenous and have limited time to make breakfast before work. But you don’t want to just order some sad desk lunch, either. Cue the Loaded Avocado Baked Eggs.

This dish is simple, fast, and full of flavor – perfect for those busy mornings when you need something satisfying but don’t want to spend hours in the kitchen.

Plus, it’s easily adaptable so you can customize it to your liking. Let’s get cookin’!

Loaded Avocado Baked Eggs- with bacon crumbles and broiled cheese on top

This recipe has almost the perfect macro ratio for Keto beginners or begin againers.

This was inspired by my Grilled Avocado with Salsa, and can be a stand alone breakfast, brunch or lunch. But could also be a great dinner if you added a side like crispy squash cups or caprese salad.

Ingredients

An avocado cut in half with the seed still intact
  • Large avocados
  • Eggs
  • Sea salt and black pepper
  • Cheddar Jack Cheese- shredded
  • Bacon cooked crispy and chopped
  • Optional: garnish with chives or green onions green parts only, sliced thin

Instructions

  • Preheat oven to 350° F.
  • Cut avocados in half lengthwise and remove the pits. Use a spoon to carefully remove some of the avocado flesh around the pit to create more space for your egg. Reserve removed flesh for another use or smash and season to top each avocado before serving.
  • Crack ONE egg into a small bowl and then carefully transfer the egg into one of the prepared avocado halves. Place the filled avocado onto the top of a muffin tin well to keep it from tipping while baking. If you don’t have a muffin tin, use a parchment lined baking sheet and take care to make sure eggs will stay upright.Repeat with the rest of the eggs and avocados. Season each with salt and pepper to your liking.
  • Place filled avocado halves in pre-heated oven to bake for 17-22 minutes, or until the eggs are cooked to your preference.
  • Remove from oven and top each avocado half with shredded Cheddar cheese and chopped bacon. Garnish with salsa, chives or sliced green onions, if desired, and serve immediately.

Hint: Make sure your oven is properly pre-heated or you will end up overcooking the avocado- which makes it weird and pasty.

Substitutions

You can leave the cheese or bacon off to suit your tastes. I leave the cheese off of mine.

  • Bacon – instead of bacon you can use sausage or any protein you like. I’ve even dressed these up with grilled shrimp and served them for dinner.
  • Dairy Free – You can leave the cheese off and add salsa if you are dairy free.
  • Vegetarian – the beef hamburger can be replaced with a plant-based burger to make this vegetarian

You can dress this recipe up or down depending on what you need. I dressed them up with grilled shrimp one night for dinner.

Equipment

You can use a parchment lined baking sheet to bake these but using a muffin tin will keep these upright in the oven.

Storage

This is not a recipe you want to keep in the fridge for more than a few hours. The avocado will start turning brown and it’s hard to reheat it.

Only make what you will eat the same day.

Top tip

There are a few tricks to making sure this recipe turns out well.

Make sure to use the bowl to pour the egg into the avocado to avoid spillage and breaking the yolk. Scoop out enough flesh so your egg has room. And, use a muffin tin if possible to keep the avocados from tipping over.
