Low Carb Caprese Salad Recipe

Caprese Salad (Cuh-pray-zay) is a simple, classic Italian salad recipe that highlights the gorgeous taste of fresh food.

It’s hard to believe in a world of constant over complication that something this tasty is so simple and healthy.

The first time I had Caprese Salad was in a little roadside cafe on the outskirts of the small medieval village of Sarlat, France. It was so simple and it made me so happy.

I was seriously falling in love with France and this dish was like receiving gift from my new suitor.

It might sound like a giddy school girl recollection, but that was exactly the way it felt….look at the gorgeous presentation from one of the best days of my life.

There are a lot of ways to present this salad, but this was special.

Let’s get started while I wipe a tear from my eye…I really cannot wait to visit this amazing country again.

🥘Ingredients

  • 8 oz. tomatoes sliced- or halved if using cherry tomatoes

Find the best and freshest tomatoes available because this dish depends on the tomato flavor. This is not the place to use store bought Roma Tomatoes unless they are in season.

I like Campari or cherry tomatoes because they have a lot of flavor.

  • 8 oz. fresh mozzarella mini cheese balls or a sliced log

Fresh mozzarella is different than the regular low moisture mozz that you use in a lot of Keto Bread Recipes. You can usually find it in the specialty cheese section of the supermarket.

You can even make your own relatively easy if you have access to good, fresh cows milk. It’s really easy and I have done it many times to give away as holiday gifts. And, it’s a fun project for kids.

  • 2 tbsp pesto *optional

All this salad really needs is salt and pepper but pesto makes it taste amazing. Basil is hard to find lately but I seem to find kale in spades.

👩🏽‍🍳 How to make the salad..

I hope you’re ready to work hard for about five minutes. This Caprese Salad recipe is super simple and my teen makes it for herself all the time (score).

  • Slice the tomatoes and mozzarella balls if they are too big. Add pesto and carefully stir if using.
  • Salt and pepper to taste.

Don’t add salt if you will not be serving this salad right away. Salt draws water and you’ll end up with a watery salad if you plan on storing it for a couple of days.

If this is a meal prep item, salt it when you are going to serve it.

  • Garnish with basil if desired and serve immediately or chill.

Basil and tomatoes are a incredible combo.

🥗Storage:

  • Store in the fridge for 3-5 days.

You can store this Caprese Salad for a few days but it’s absolutely best when it’s made fresh.
