Instructions
Melt the butter in the microwave. (use a microwave safe dish)
To a large mixing bowl - like the one a Kitchen Aid - ad peanut butter, melted butter, cocoa powder and erythritol then mix until smooth.
Add the shredded coconut and chocolate chips and mix thoroughly,
In tablespoon size scoops spoon onto a sheet of parchment (will be 24 cookies)
Put in the Freezer for 20 minutes.
Enjoy now or store in the fridge in an airtight container
