Keto Peanut Butter Cup Mousse

Hey you! This Keto Peanut Butter Cup Mousse Recipe is the bomb and I don’t say that lightly.
If you have browsed around my site at all…you know that I love the chocolate & peanut butter combo (who doesn’t).

🥘Ingredients:
- 6 tbsp Mascarpone Cheese
If you don’t have any mascarpone cheese (mas-car-pony) available, you can use cream cheese.
Mascarpone is a traditional Italian dessert cheese and it’s mellow flavor is perfect in the recipe if you can get a hold of it.
- 2 tbsp Sugar Free Peanut Butter Natural PB
I am LOVING the flavor of this low carb Peanut Butter with Macadamia nuts….omg.
- 1/2 cup Ricotta Cheese
This ingredient can be substituted with more Mascarpone if you need to but I it’s naturally sweet flavor and smooth texture are amazing in this dessert recipe.
- 1/2 cup Coconut Milk * or heavy whipping cream
I love coconut with chocolate and the flavor doesn’t take over in this recipe but you can use heavy whipping cream just as well.
- 1/4 cup Erythritol
I have been using Allulose lately and find it to be easier on my belly and I love the taste.
But I am still including Erythritol in my recipes because it has gotten less expensive, is well tolerated and is actually good for you.
- 2 tbsp Unsweetened Cocoa Powder
I went middle of the road in the amount of chocolate I used in the Keto Peanut Butter Cup Mousse Recipe but this makes for a lighter chocolate version of the dessert.
I like dark chocolate and usually use three or four tablespoons of this ingredient. But, not everyone likes their chocolate as dark as we do.
This ingredient should be a *to taste sort of deal.
This is the brand that we LOVE around here because it’s priced right, organic, GMO free and all of that other good stuff.

The Keto Peanut Butter Cup Mousse instructions are not too complicated but if you have any questions please leave them in the comments toe help others out too.
- Add all ingredients into a bowl and mix with a spoon or whisk.
- Once the ingredients are incorporated, use an immersion blender to completely combine and smooth the ingredients.
- Pour mixture into 4 ramekins and set in the fridge for at least 4 hours.
- Top with whipped cream and chocolate shavings if desired when serving.
🧾 Variations and Storage:
You can make this recipe a day or two ahead of time, but not much longer than that.
Make sure they are covered tightly and you may want to put plastic wrap directly on the surface of the mousse if storing for more than a day to keep that weird “pudding skin” from forming.
Vegan?
Exchange the mascarpone cheese for vegan cream cheese and tofu in place of the ricotta.
If you have allergies to cows milk you can always use goat cheese products if thay are available but the flavor will be a little more on the “sour” side.
Additions:
- Add a touch of whiskey for boozy mousse.
- Top with low carb whipped cream.

- Crumble chopped homemade Keto Bark on top.
- Top with chopped peanuts
