Hey There! These Keto Chocolate Almond Clusters are going to make your day!

Who can resist toasted almonds and coconut en-robed in creamy dark chocolate? Not me.

These will only take about five minutes to make and they will keep for about ten days..at least I think they will. They never last that long so it’s just a guess.

The Keto Chocolate Almond Clusters Ingredients:

  • 4.5 oz. Lilly’s dark chocolate chips 1/2 of the 9oz bag.
  • 4 oz almonds chopped

 Four ounces is a little less than a cup if you don’t have a scale. You can chop them in the blender or if you’re feeling fancy, toast them in a dry pan and them chop them.

Toasted almonds are crunchier and have a lot more flavor than raw almonds.

If you have a small blender, use that. It’s so much quicker.

Use peanuts instead of almonds if you like them better, or to just change it up.

  • 2 tbsp unsweetened coconut chips

I usually but coconut chips rather than flakes. But, I really like coconut and eat them with my Keto Cereal.

If you aren’t a huge coconut fan, it’s fine to leave them out. It won’t change anything for the rest of the recipe.

  • sea salt *optional for sprinkling on top

I  really like chocolate and sea salt. But I LOVE chocolate and truffle salt.

If you have never tried Truffle Salt…don’t. It’s addictive.

But in case you want it anyway, this is the kind we buy. It won’t break the bank and it’s fan-freaking-tastic.

The Keto Chocolate Almond Clusters Instructions:

  • Set out 10 cupcake liners. They can be mini or regular sized.

I didn’t have any mini liners and I didn’t want to go out just for those. So I used regular cupcake liners.

In fact, you don’t really need the liners at all but it does help to keep the portions similar and it looks nice.

If you don’t want to use them just place your candy in ten even-sized dollops on a parchment lined plate before placing it in the fridge.

  • Melt the chocolate in the microwave oven in 20 second intervals, stirring each time.

DON’T BURN or the chocolate will seize. Just go until it’s smooth and melty. This is the only step that has to be followed carefully.

  • Mix everything but the sea salt for sprinkling together.
  • Spoon into the liners.
  • Chill in the fridge for 15 to 20 minutes.
  • Store in airtight container in the fridge for up to 10 days. Freeze for longer storage.
