Keto Almond Flour Crackers Recipe

Keto Almond Flour Cracker Ingredients:

Keto Almond Flour Crackers are low carb, gluten free and make a great canvas for any Keto Tapas Meal.

Pairing these low carb crackers with salted meats, hard cheese, and a glass of vino makes a fancy snack for a romantic evening by the fire.

Coconut oil is solid below 86°F. to mix in a recipe it will need to be liquid.  You can melt it in the microwave, but allow it to cool before mixing in the egg – so you don’t cook the egg while mixing.

Instructions for the Keto Almond Flour Crackers:

  • Preheat oven to 350° F.
  • Beat the egg and coconut oil in a medium bowl.

If you live in a place where coconut oil is solid you will have to melt it before you can beat it with the egg. 

After heating the oil, ensure that it is cool enough that it will not cook the egg.

  • Mix in the almond flour with the egg and oil mixture and mix thoroughly

If you would like to add some leafy spices like oregano or sage add it into the egg and oil mixture.

  • Roll the dough in a ball

To make the dough easier to handle put some oil an your hands and make them less sticky.

  • Place between two pieces of parchment and roll to ⅛ inch thickness

Rolling between two sheets of parchment is absolutely the easiest way to get these rolled thin and evenly.  You can see how I did it in the my video at the beginning of this post.

Or this video from Kelly at JustATaste.com demonstrates a great technique but with waxed paper. 

You can use the same technique with parchment instead of waxed paper – you cannot put waxed paper in the oven.

  • Remove top parchment
  • With a pizza cutter score into squares
  • Use a salt shaker to evenly salt the tops of the crackers.

You may also like to sprinkle pepper or garlic.

  • Transfer the parchment and with the crackers onto t cookie sheet.
  • Bake for 10 to 12 minutes until golden.
  • Remove and allow to cool for at least 15 minutes.
  • Enjoy.

How to Store Keto Almond Flour Crackers?

In the fridge:

Once the crackers are completely cool you can store them in the fridge in an air-tight container for up to a week.

In the freezer:

The cool thing about these crackers is that you can make lots of them all at once. You can freeze those that you’re not going to eat within the first week.

Once they are completely cool, put them in a zip-lock freezer bag.

Take them out when your ready to eat the and either allow them to come to room temp.

Or, you can always put them on a cookie sheet and put them in the oven at 350° F for 5 minutes or so to thaw them and crispy them up.
