Keto French Toast

Ingredients & Tips:

Make your bread first so that it can be cooling while you make your batter. This will keep things moving quickly.

Add all of your dry ingredients first. This is a must to keep the batter from being overworked. If this happens the baking powder can’t do it’s job.

The bread will be whatever shape bowl you use to make the bread. Mix it up by trying different bowls if you are picky about the shape. In any shape, it will taste fantastic!

Make the Bread

  • 1 tsp butter

Room temperature butter is best so that it incorporates easily.

We store this in the freezer to keep it fresh but that can leave it lumpy. Use a fork to get the lumps out before you add any wet ingredients.

We also keep this in the freezer to keep it fresh so the same advice applies. If you use the nut flours quickly you won’t need to keep them in the freezer.

But as time goes on and your bread cravings decrease you’ll use less of it and freezing it will keep it tasting great for longer.

Room temperature eggs are best for baking but I know that it is easier to say then to do. No one just leaves eggs on their counter all day long waiting to see if they want to make something.

Just set the eggs in a bowl of hot ( not boiling) water for a few minutes while you gather up the other ingredients.

  • 2 tbsp heavy whipping cream

Heavy whipping cream is a staple if you are going to be ding any Keto Baking. And, it whips up nicely in whipped cram. If you have never had fresh whipped cream you are missing out.

It’s easy and doesn’t contain all of the nasty stuff in the spray can versions. I will never eat that stuff again.

Make the French Toast Batter

  • 2 eggs

That business about using room temperature eggs is really important here. if you use cold eggs they will re-solidify the butter and mixing the batter to a uniform consistency is going to be impossible.

  • 2 tbsp heavy whipping cream

Don’t shake your heavy whipping cream. It breaks the molecules and it will start separating…which makes it go bad faster.

I didn’t know this until I saw my husbands panic stricken face when he saw me doing it. The ” OMG! What are you doing!” clued me in too.

This is a *to taste sort of ingredient. We like cinnamon around here and use a lot more than the recipe calls for. Not everyone loves this spice so I kept it reasonable when I was developing this recipe to share. ( Those people are weird but I like to be inclusive).

  • 1 pinch salt
  • 2 tbsp butter

Keep your butter in a covered dish on the counter or put it in the microwave to warm it up.

Instructions to put it all together:

  • Butter two large mugs or bowls with a flat bottom.
  • Mix together all dry ingredients in the mug with a fork. Crack in the egg and stir in the cream. Combine until smooth and make sure there are no lumps.
  • Split batter between two mugs or bowls. Microwave them on high for about 2 minutes. It will start pulling away from the sides when its done. You can do the toothpick test to check the middle if you aren’t sure.
  • Let cool and remove from the mugs. Slice each in half.
  • In a wide bowl or pie plate, whisk together the eggs, cream and cinnamon with a pinch of salt. Pour over the bread slices and let them soak. Turn them over a few times so the bread slices absorb as much of the egg mix as possible.
  • Fry in plenty of butter and serve immediately with Keto magic maple syrup or powdered Erythritol.

  1. I love this recipe. It doesn’t even make me miss my old pre-Keto french toast.
    I made some slight changes. I added a dash of cinnamon to the bread mixture and 1/4 teaspoon stevia as well. I also added 1/4 teaspoon of stevia to the batter…my teenage son, who does keto now also, said the only thing he would change is to make it a little sweet.
    He definitely has a sweet tooth!
    I found small square glass Pyrex dishes and the french toast came out looking like the traditional breakfast dish we all know.
    I’m so happy that this is in my households breakfast rotation now!

  2. Hi Susan! Congrats on your good health! That is truly the most important kind of wealth that we can have. I’m glad that you’re finding recipes to suit everyone. Making two meals at dinner time is so time consuming. My teen is not strictly low carb but I find that she has “come around” with most meals. We used make her regular pasta to go with sauces but now she says they taste like sugar. Same with regular bread and high carb tortillas. She has stopped eating them on her own because she thinks they taste weird. Your guys may do the same eventually too. And, the air fryer has done wonders in terms of making naturally low carb veggies and meats taste AMAZING. If you haven’t tried one of those I highly recommend it. It has opened up a whole new world of possibilities for us. Cheers to you and yours!

  3. I’ve been on Atkins since long before Atkins was a known diet. My mother owned three restaurants, which is how she supported her seven children. I was the oldest. We were her staff, LOL. I disliked waitressing, so I learned to cook. I was challenged with a huge appetite and weight gain during puberty. I noticed that amongst my mother’s customers, that the lean ones ate largely protein, and that the heavier ones ate largely starch. I deduced, therefore, that I should eat more meat and less starch. It worked, and even though my mother and all but one of my siblings, who is a light, very picky eater, have obesity-related diseases, at 68 years of age, I have none – not even cholesterol issues. With the advent of KETO, I was able to expand on Atkins and now enjoy a richer menu. My daughter and I only just now discovered your site. I love French Toast and my daughter loves Chicken Pot Pie. We’ll be preparing both of these recipies for the holidays. She and I are only 5’2″, while the men in her family average 6’4″. Feeding their carb-hungry appetites while satisfying our own desire to eat palatable low net carb meals has been difficult because we’ve essentially been preparing two different menus at each meal. Now they eat low carb too and are quite content. Looking forward to using and sharing your recipies with our friends.
