This Slow Cooker Spicy Crack Chicken Recipe surpassed all of my expectations!

I was thinking that I would make it and eat it as an easy dip for the Broncos last game of the season. The end.

But, it also makes great wraps, sandwiches and it’s a great topping for cauliflower rice too!

I hate the name “Crack” chicken. But it’s the name that everyone seems to know, so I’ll roll with it on my spicy version of the original recipe that was passed along by a friend.

Served Low Carb Spicy Crack Chicken

🥘Ingredients:

  • 1.5 pounds Chicken thighs -skinless/ boneless thighs
  • ½ cup Chicken Broth * 4 oz
  • 1 tsp powdered garlic
  • To taste- 1 tsp onion powder
  • 1 tsp dill
  • 4 oz green chilies – * canned is fine
  • 8 oz Cream Cheese *room temperature, cubed to make melting easier.
  • 2 cups shredded cheddar cheese * 8oz- divided
  • 6 slices bacon * divided – cooked crispy and chopped

Toppings:

  • chopped green onions – garnish
  • chopped fresh parsley – for garnish
  • Salt and pepper to taste

👩🏿‍🍳How to make the Spicy Crack Chicken:

1.) Prepare the crack chicken by pouring the chicken broth and green chile into slow cooker.

2.) Add the chicken thighs, garlic, onion powder and dill. Cover and set on LOW for 5 hours, or on HIGH for 3 hours. Until the chicken is tender.

3.) Remove the lid and shred chicken inside the slow cooker using two forks.

4.) Stir in cream cheese, 1 ½ cups shredded cheddar cheese and ½ of the bacon; stir until completely melted and combined.

Cover and let re-heat for five minutes if it cooled off too much in this step.

5.) Spoon into to a serving dish and top with the remaining cheese, chopped bacon and parsley and green onion garnish if using.

Serve with veggies, low carb crackers, riced cauliflower or whatever you like with dip.

Can I make Slow Cooker Chicken Dip ahead of time?

You can make the spicy crack chicken ahead of time and use it for quick lunches or weeknight dinners. It keeps in the fridge for 4-5 days easily.

You could make it overnight while you sleep but the fantastic aroma might wake you up.

Can I freeze the Low Carb Spicy Chicken Dip?

Yes, you can freeze any leftover Chicken Dip for up to two months. Just give it a good stir and reheat with more cheese on top to freshen it up.

What should I serve with the Chicken Dip besides veggies?

You can make delicious low carb wraps, sandwiches and zucchini noodle toppings or serve them with any of these recipes as well.

    Note: I was out of dill weed so I used dill seed and frozen chicken in this batch. I prefer the dill weed though.
  • Remove the lid and shred chicken inside the slow cooker using two forks.
  • Stir in cream cheese, 1 ½ cups shredded cheddar cheese and ½ of the bacon ; stir until completely melted and combined.
    Cover and let re-heat for five minutes if it cooled off too much in this step.
  • Spoon into to a serving dish and top with the remaining cheese, chopped bacon and parsley and green onion garnish if using.
