🥘Ingredients:
- 5 lb Chicken (4-5 pounds whole) or your favorite cuts.

- ½ stick butter Melted

👩🏾🍳How to make the Chimichurri Chicken:
Chimichurri Butter
- Make the Chimichurri Sauce if you haven’t already. The link to the easy recipe is in the post.
- Mix the melted butter with the Chimichurri Sauce until combined.
Roasted Chicken
- Pre-heat oven to 400F
- Rub the Chimichurri butter all over chicken, including under the skin as mush as possible and place in a roasting pan.
- Bake the chicken (uncovered) at 400F for 30 minutes
- Lower heat to 350F, baste chicken and bake for another 60-75 minutes or until the thighs register 165°F or 74°C. Rest (tented with foil) for at least 10-15 minutes before carving the chicken.
If your chicken is larger, smaller or you are just making your favorite cuts, you can start with baking for 50-60 minutes before checking for doneness with a meat thermometer.
The meat should read 165F and have a crispy skin when done. A good rule of thumb is about 15 minutes per pound of baking time per pound of whole chicken.
Pieces or “cuts” of meat will take less time.
- Serve immediately with additional Chimichurri Sauce or sauce of your choice.

📋Tips & FAQ’s:
Do I have to use a whole chicken?
Nope. You can use any cuts you like. It’s easier if your chicken has the skin on so that you can rub the sauce into the meat in a place that it will have no choice but the “stick”. Plus crispy chicken skin is amazing.
But, you can use skinless cuts if that your “thang”. Just make sure to marinate it for at least 15 – 60 minutes if time allows and cook to 165F.
