Keto Cinnamon Churro Chaffles Recipe

I am not going to lie, this Cinnamon Laced, Low Carb Churro Chaffles recipe is church!

It took me all week to perfect and my family didn’t mind testing each batch one bit.

It took me right back to my childhood stomping grounds on the beaches of Southern California where we searched out the smiling faces of the churro cart vendors for afternoon treats.

If you haven’t heard of chaffles yet, you must be new to Keto.

What are chaffles?

Cheese + waffles = chaffles. It’s a low carb workaround for an amazing treat we wouldn’t normally be able to call “low carb”.

Can we make chaffles dairy free?

Nope, we just call those “low carb” waffles.

🥘 Ingredients

Churro Chaffle:

  • 1 Egg

Room temp eggs are best when doing any kind of baking. Place your egg in a bowl of warm water to speed up this process.

  • 3/4 cup Mozzarella cheese shredded

Low moisture cheese is required for this recipe.

You can substitute 2 tsp coconut flour if you need to but I really like the almond flour best in this recipe. It’s your chaffle, so use what you like.

  • 2 tsp Butter

The butter needs to be softened. You can do this in the microwave if needed.

  • 2 tbsp Allulose or preferred sweetener

Okay, since you will be using a bit more sweetener for the topping, I really recommend Allulose over erythritol in this recipe.

Allulose is a “rare” low carb sugar and doesn’t cause as much stomache distress for some people as erythritol.

Most people can tolerate erythritol quite well but if you have had any issues, Allulose is the key. You can read all about low carb sweeteners here.

And, this is the best deal that I have found on great quality Allulose.

Cinnamon is one of those…”to taste” ingredients. The amounts of cinnamon that I use in my recipes should always be considered a guide.

This ingredient can be substituted for psyllium husk. Use a whole teaspoon if you decide dot use it.

Xanthan gum is great for making sturdier low carb breads.

Topping:

The toppings amounts are a guide. Some people like their churro chaffles sweeter and you can use more sweetener if you want.

👨🏽‍🍳How to make the chaffles:

  • Preheat waffle iron.

This is a really important step when making chaffles. It keeps the cheese in the batter from getting too runny and making a mess.

  • Mix all ingredients except topping.
  • Lightly brush oil on waffle maker surface. Pour enough of the chaffle batter into the waffle maker to cover the surface well. (That’s apx 1/2 cup batter for a regular waffle maker, 1 cup for a large Belgian waffle maker and 1/3 cup for a mini waffle maker.

I use a silicone brush to oil the surface of the waffle maker. It keeps the churro chaffles from sticking and it’s dishwasher safe. (A must for my kitchen tools).

  • Cook until browned and crispy, about 3-4 minutes for small waffle makers.

If you are using the big Belgian waffle maker your cooking time will be longer. I use two cycles to make sure my chaffle is crispy.

  • Carefully remove the chaffle from the waffle maker and set aside. The chaffle will need to cool to get crispy. Repeat with remaining batter, if using a smaller waffle maker.
  • Stir together the erythritol and cinnamon for topping. After the chaffles are cooled, brush them with melted butter, then sprinkle all over with the cinnamon “sugar” topping (or press in the topping). Top or dip in low carb maple or chocolate syrup if desired.

📋Tips:

  • You can make these churro chaffles ahead of time.

To reheat, use the toaster oven or dry fry in a pan. Add the topping after it is hot.

The microwave makes chaffles floppy so I do not recommend microwaving.

  • The Churro Chaffles freeze well.

Use an airtight freezer bag and reheat the churro chaffles in the toaster and add toppings once they are hot.
