🥘Ingredients You Need:

Roasted Pecans:

You don’t have to roast the pecans before making this pudding but it makes a huge difference in how the final product tastes.

It doesn’t take long and it’s worth it.

Most of my recipes from wayyyy back include erythritol. After a while, the monk fruit/erythritol blend came onto the scene. 

I still really like the monk-fruit blend but nowadays, I am LOVING Allulose. It’s a “rare” sugar (not a sugar alcohol) and it doesn’t have any weird after tastes nor does it cause most people stomach upset.

If you haven’t tried it…I can’t recommend doing so enough. This is the best deal that I’ve found.

  • 1/2 cup pecans

Feel free to substitute this ingredient with other nuts if want but the pecan pie flavor depends them.

I usually buy these at Costco because they are TWICE the price on Amazon (sorry Amazon, I still love you).

Pudding:

Chia seeds are a SUPER food.

But they kind of get left out of a lot of recipes that they would be amazing in. Getting enough fiber on Keto is tough for some people and chia is an amazing solution.

They are required in this recipe but they go great on salads, drinks in soups and sauces too.

  • 2 Cups Unsweetened Cashew Milk

You can use whatever low carb milk you like (almond, soy, etc.). But cashew milk lends a sort of creaminess and complimentary flavor that is perfect in this recipe.

You don’t HAVE to use this flavoring but it makes this recipe taste like pie…mmm pie.

Switch it our for a quality vanilla extract if you need to and your finally result will still be delicious.

I feel like cinnamon is one of those “to taste” sort of ingredients. Feel free to use more if you like it.

Nutmeg is another one of those ingredients that should be to your own liking.

👩🏽‍🍳How to Make the Pudding:

  • Mix melted butter and tsp with pecans in a small bowl. Toast them in toaster oven or in a pan for 2-3 minutes or until lightly toasty and fragrant.

To save time, do this while you are gathering the other ingredients for the Keto Pecan Pie Pudding.

  • Add all pudding ingredients and 1/2 of the pecans to a blender and blend until smooth. Reserve the other half of pecans for topping.

You don’t have to save the pecans for the topping but it makes a beautiful presentation and limits the “consistent” aka boring texture.

  • Pour evenly into 4 containers, cover and refrigerate for at least four hours and up to 48 hours. Top and serve chilled.

You can top this pudding with Low Carb Whipped Cream,  additional cinnamon or low carb breakfast syrup.

🔪Meal Prep and Storage Suggestions:

You can make this pudding up to 48 hours before you plan on eating it.

This pudding doesn’t freeze well. I am not sure why anyone would want to freeze it since it’s so quick to make but I wanted to cover that question in case anyone is wondering.

The cashew milk will separate during thawing and make the final product wonky.

📋Tips:

  • Make this recipe at least four hours before you plan on serving it.
  • Store in a covered container for up to 48 hours.
  • You can top the final product with sugar free syrup if you like before serving. I used magic syrup on mine. But next time I’ll use this new Allulose based syrup that I just got (so excited).
