This delicious, healthy pudding turns your favorite high carb holiday dessert into a festive treat that you can have anytime. It's got a creamy texture and rich flavor that's perfect for either dessert or breakfast.
Mix melted butter and tsp with pecans in a small bowl. Toast them in toaster oven or in a pan for 2-3 minutes or until lightly toasty and fragrant.
Add all pudding ingredients and 1/2 of the pecans to a blender and blend until smooth. Reserve the other half of pecans for topping.
Pour evenly into 4 containers, cover and refrigerate for at least four hours and up to 48 hours. Top and serve chilled. See post tips for alternatives.
