Keto Key Lime Coconut Popsicles

Keto Key Lime Coconut Popsicle’s are just in time for the heat wave.

They’re refreshing, healthy and super easy to make. Share them with the kids or add a little vodka to the mix and make a frozen cocktail pop.

These are almost too easy to call a recipe.

The Keto Key Lime Coconut Popsicle’s Ingredients:

You can use coconut milk if you want to. It is higher in carbs and this is why I chose to use almond milk and add in the coconut flakes.

  • 5 Tbsp lime juice or to taste ~ I used the juice from 2 small limes

I didn’t use “Key Lime’s” because I only had access to regular limes. I think the flavor is the same but you can use whatever you have access to.

Honesty…Key Lime just sounds more tropical and delicious and I wish I had access to them.

  • lime zest *to taste – I used the zest of 1 lime

The zest is full of natural color and flavor.

You can use any sweetener that you like. I only use allulose. Check out this post on good, bad and ugly Keto Sweeteners.

My idea of “sweet enough” might be different than yours. I think it has to do with how long you have been doing Keto…but maybe not. Just check it out to be sure.

  • 1/2 cup Coconut Flakes Unsweetened

You can keep these whole or blend them up. It’s delicious either way but the end result will have a different texture if you leave the flakes whole. ( Looks gorgeous though).

  • 1 tsp gelatin

Use Agar for vegetarian/vegan pops. I am not sure about the conversion rates.

I think in this recipe you would use 1/3 of a teaspoon.

If you aren’t vegetarian, use regular gelatin. It has a ton of good collagen and beneficial nutrients. Check the benefits out here…

  • 1/4 cup water boiling

I boil a pot of water on the stove and scoop out the right amount with a metal measuring cup.

I figured that little tidbit out years ago after scalding myself more than once while I was learning to cook.

Keto Key Lime Coconut Popsicle Instructions:

  • Blend first 5 ingredients and adjust sweetness and flavors to taste.

Please, please, pleas, make sure you taste it before pouring it into your molds. I have been getting some comments on Pinterest about certain dishes not being sweet enough for Keto Newbies.

I get it. We’ve all been there, and some desserts we like to be sweeter than others.

Just add more sweetener to your liking…after all, this recipe is all about what YOU like.

  • Dissolve gelatin in 4 tbsp boiling water.

Stir it up until it is 100% dissolved. It keeps the popsicle’s from being rock hard like a block of ice.

You know what else works for that? Vodka.

If you are going to add booze to your Keto Key Lime Coconut Popsicle’s make sure you leave out an equal amount of almond milk.

  • Blend gelatin into mixture until well combined.
  • Pour into molds.

I have included a link in the recipe for the molds that we like but you can use whatever you have in a pinch. My Mom used ice cube trays, saran wrap and toothpicks. Remember those?

  • Freeze for 4-6 hours.

Everyone’s freezer is different so be patient. Make them the night before if you can.

Optional Additions for the Keto Key Lime Coconut Popsicle’s:

  • 1 tbsp chia seeds
  • 1/4 citric acid if you like your pops really sour
  • Lemon Juice instead of lime for a lemony fresh flavor
  • Chopped fruit like strawberry, lime slices or raspberries
  • Mint Leaves go great with lime. Blend them in for more color and flavor.

Ingredients
