Keto Air Fryer Mozzarella Sticks

So…I just cant believe these Mozzarella Sticks are Keto. They are too delicious.

And, while a big block of cheese isn’t exactly “health” food, they are a fantastic treat that won’t knock you out of Ketosis.

I have started only posting recipes that my teen will eat because I think that might help people who have kids (no one wants to make a separate Keto dinner right?) Annnd, everyone wants their kids to eat healthy food too.

Soooo, I have to say that Ada ate (way) more than her share of these and it’s safe to say that these are picky teen approved.

🥘Ingredients:

  • 8 mozzarella string cheese sticks low moisture, part skim

I don’t know if this works with cheddar, but you bet I’m going to try it soon.

Make sure that you use low moisture string cheese for this project.

Fresh Mozzarella won’t work even though its freaking delicious. If you want to learn how to make your own fresh mozzarella, check out this post.

I am not affiliated with the cheesemaking.com but I have made fresh mozzarella cheese using their products and it was fun and delicious.

  • 2 eggs beaten

I started with one and had to add another. It’s just easier to start out with enough egg to begin with.

  • 3/4 cup Parmesan

You can use the cheap stuff in a can or finely shredded if you want to be get fancy.

I am sure you could sub in coconut flour but it might (definitely) change the flavor. If you choose to use it, start with 1/4 cup.

Carbquick would make an excellent coating for these Mozzarella Sticks. If you choose Carbquick, use 1/2 cup.

This ingredient is optional. Leave it out if you aren’t fond of the flavor.

👩🏽‍🍳 How to make the Cheese Sticks:

  • Prep a freezer safe plate with parchment paper.

Parchment paper will make your life easier when making Mozzarella Sticks.

  • Unwrap and cut string cheese in half cross ways to make short sticks.
  • Beat your eggs in a small bowl.
  • In a medium bowl, mix the coating ingredients. You shouldn’t need extra salt because the parm is salty, but test it to make sure.
  • Dip the cheese in the egg, then roll in the coating and repeat for each stick so they are each coated twice and FULLY coated. This is important. You don’t want cheese oozing out.

Press the cheese into the coating to make sure it sticks.

  • Place the cheese sticks on the plate and freeze for at least one hour or until frozen.

You’ll need to clear a flat place before you start to avoid frustration. I wish I would have thought of that before I started.

  • Once thoroughly frozen, remove from the freezer and place on the air fryer rack that is covered with parchment. Spray each stick with a little oil. ( If your air fryer is smaller, do two batches to make sure there is room for the air to flow. The sticks should not touch.

I have this Ninja Foodi and all of the sticks fit on the top rack just fine.

  • Set the air-fryer to 390F and cook for 10-13  minutes. Turn them over after 6 minutes.

The crust should be starting to brown.

Keep an eye on them after the 10 minute point to make sure they don’t burn.

  • Serve immediately with low carb dip for best results.

Store in the fridge and re-heat in the air-fryer if you have leftovers. They’ll stay fresh in an airtight container for 2-3 days.

I can’t imagine them lasting this long but I thought I would throw it in, just in case.

📋Tips and FAQ’S:

~ Can I make these ahead?

Yes!

Make up a batch and stop at the point where you freeze them. Keep them in an airtight container in the freezer for up to two months and fry them up when you’re ready.

~ Can I make the Low Carb Mozzarella Sticks in the oven?

Yes. Preheat the oven to 400F, lay them on parchment and turn over after 5 minutes.

Continue until they are golden brown and pull them out immediately if they start oozing.

~ Can I make these with Cheddar?

I hope so friend…I hope so lol.

I’ll try it someday but I don’t see why it wouldn’t work. Cheddar is a lot sharper and may be better suited to small servings though.

~ What sauce should I dip them in?
