Making this "diet" into a sustainable practice starts by arming yourself with great recipes and this one is definitely in that category.

The savory flavors of the garlic and rosemary blend perfectly with the bread and is a favorite with soups, salads and sauces.

The Keto Focaccia Bread Ingredients:

  • 6 oz. mozzarella cheese shredded

If you have ever made fathead dough, you know that you'll need to make sure to use the "low moisture" shredded cheese. This is basically any mozzarella that isn't labeled "fresh".

  • 2 tablespoon cream cheese
  • 1 teaspoon white wine vinegar

If you don't have any white wine vinegar on hand you can use red wine or apple cider vinegar. I have tried it with plain white vinegar but I am sure that will work too. Most of the "tanginess" bakes out anyway.

  • 1 egg
  • ¾ cup almond flour
  • 2 teaspoon Erythritol

*Optional but makes it taste like "real" bread that you miss so much. Most regular bread recipes contain sugar and commercial/bakery bread recipes ALWAYS contain extra sugar for flavor.

  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • Black Olive Slices *Optional

If you don't care for black olives try something else.

Dried tomatoes, green olives or another spice, like oregano can keep this recipe fresh. Experimentation is always encouraged around here.

Garlic & Rosemary Butter Topping Ingredients:

  • 2 oz. butter room temp

My kitchen never really gets too warm, even if I am baking (it's a weird old house in the mountains). So butter is always solid, even when it sits out. I usually have to microwave ti for 15 seconds or so to get it "soft" enough.

  • 1 teaspoon powdered garlic

You can use fresh garlic if you like. Just make sure that you chop it finely and double the amount.

I tend to use powdered garlic more often because of convenience, especially right now when going to the grocery store is such a hassle.

  • ½ teaspoon sea salt
  • 2 teaspoon fresh rosemary

Chop finely or use 1 teaspoon dried rosemary. In the summer I use fresh rosemary from my garden but the rest of the time I use the dried stuff.

For dried herbs, I use half of the amount a recipe calls for.

The Keto Focaccia Bread Instructions:

  • Preheat the oven to 400°F.
  • Heat the mozzarella and cream cheese in the microwave in 30 second intervals until you can combine it. DO NOT BURN or the cheese will seize.
  • Add all other ingredients and combine.
  • Shape the dough into an 8 inch diameter oblong disk. Place on parchment paper.
  • Poke holes in the dough with a fork. Bake for about 12 minutes or until the bread has turned a golden color. Remove from the oven and let cool a little.
  • Mix together butter, garlic, salt and rosemary. Spread on top of the bread and bake for another 8-10 minutes.
  • Divide into 8 pieces and serve warm ( not hot).

Low carb breads tend to be very tender (floppy) when they're hot right out of the oven. You'll need to let it cool for 10-15 minutes before slicing and serving.

Ingredients

  • ½ teaspoon sea salt
  • 2 teaspoon fresh rosemary Chop finely or use 1 teaspoon dried rosemary.
