Keto Cashew Coconut Bars

These are a treat for cashew lovers! Be careful though, it’s hard to just eat one at a time.

This is a really simple recipe and the hardest part is waiting for them to chill.

 The Ingredients

If you are keeping you almond flour in the freezer make sure it is free of lumps before you add the butter.

I know that I am going to get questions about switching this out for coconut flour….I am not sure if it works and it definitely could not be a 1:1 switch since coconut flour is so dry.

  • 1/4 cup Butter

You butter needs to be melted before you combine it with the almond flour.

  • 1/4 cup Sugar Free Maple Syrup

You can use any brand that you like. We like this Magic Syrup. Check out this post on Keto Sweeteners if you haven’t already.

There are some great low-carb sweeteners and some down right dangerous alternatives too.

We like extra Cinnamon. The measurement is merely a suggestion.

  • pinch Salt
  • 3 oz Cashews chopped

I really love cashews but if you don’t have any on hand you can always use almonds, walnuts or pistachios.

  • 1/4 cup Shredded Coconut unsweetened

I keep a lot of this around to use in “Keto” cereal. This is the kind that I LOVE.

They are bigger “flakes” than you get with the “shredded” type of coconut that is usually sold in stores.

The Instructions

  •     Combine melted butter and almond flour in a large bowl and mix until uniform.

You can switch the butter out for coconut oil if you want to. But you may want to add additional salt if you do this.

  •     Add cinnamon, salt, sugar free maple syrup and shredded coconut. Mix well.

Try to get this mixed as evenly as possible so that you combine all of these fantastic flavors in each bite.

  •     Roughly chop 3 oz of cashews (you can use raw or roasted add it into your coconut cashew bar dough. Fully Combine.

I use the small jar that came with my blender to do this. It’s sooo much faster and the cup is dishwasher safe. This is what we use.

  •     Line a small baking dish with parchment paper and spread the coconut cashew bar dough in an even layer. Place them in the refrigerator and chill for 2 hours.

Pop them into the freezer to speed this up.

  •     Cut evenly into 8 even-ish bars and enjoy. Store in the fridge for a week (but let’s be honest, they won’t last that long.)
