Lamb with Spicy Chocolate Sauce Recipe

I know, Low Carb Lamb with Spicy Chocolate Sauce sounds equal parts exciting and weird.
No matter what your brain is telling you, this spicy chocolate sauce is subtle, elegant and the flavor is superb.
My family ate every single bite and “mmmmed” the whole time…
This recipe is low carb gourmet that you can make in less than a half hour of active time…and it only has 1 net carb per serving.
🥘Ingredients:
Marinade
- 1 pound lamb chops 4 lamb chops – or equivalent for 4oz servings
I usually use lamb loin chops because they have suddenly become very available and affordable.
But there are a ton of different cuts that may be available in your area.

- ¼ tsp Salt
This ingredient is always “to taste”…my recipe is a guide and you are in charge of the salt shaker.
- ¼ tsp rosemary
I love rosemary and it’s excellent with lamb. If you are not a fan you can swap this ingredient out with savory leaves.
- ¼ tsp thyme
- 2 tbsp olive oil
Dark Chocolate Sauce:
- 1 tbsp Butter
- 1 Cup beef broth *250 ml
- ½ oz Sugar Free Dark Chocolate Chips * about 14 grams
- ½ tsp pepper to taste
- ¼ tsp cinnamon
- ⅛ tsp Cayenne pepper *to taste
👩🍳How to Make the Lamb and Spicy Chocolate Sauce:
Marinade –
- Marinate at least 30 minutes or up to 24 hours.
Add oil, spices and chops to a ziploc bag to marinate for at least 30 minutes or up to 24 hours.
Cooking Instructions
- Add oil to a cast iron pan and fry chops on each side for 3-4 minutes on medium high heat until medium/ rare or however you like lamb. (120F -58C for medium rare).
2. Remove lamb chops from the pan to a plate and tent with foil to keep warm. Reduce heat to avoid splashing.
Pour in beef broth while scraping to deglaze the pan. (Scrape the browned bits off of the bottom of the pan). Bring to a boil and let the sauce reduce and thicken to about ⅓ cup or so.
This wont be a super thick sauce but it shouldn’t be too watery either.
I boiled my sauce for about 5 minutes but different stoves/pans will take different amounts of time.
3. Turn the heat down to a simmer and add chocolate and spices.
Whisk until smooth. TASTE for seasoning and make adjustments as necessary.
4. Serve the sauce on the side with the lamb or plate it with the sauce beneath the chops.
I am not a master at plating food but I love a beautiful meal.

Can I make the Low Carb Lamb with Spicy Chocolate Sauce ahead of time?
This dish is at it’s best when it’s fresh. But of course you can re-heat leftovers in a hot pan.
You could probably reheat in a microwave if you have to as well.
Can I freeze the leftovers for later?
Noooooooo! If you don’t think you’ll be able to finish the dish within a couple of days cut it in half.

Side dishes for this meal can be as simple as a nice fresh greens, sliced tomatoes or any of the follow are great…
- Zoodles drizzled with truffle oil.
I’m hard pressed to think of anything this truffle oil couldn’t improve. Caution: it’ll spoil you for life.
