Low Carb Creamed Spinach

Hi there! This low carb creamed spinach is delightful and it's been a staple side dish around here for awhile because it's so quick.

Plus, it's a great way to get those greens into a low carb diet.

This will be a short and sweet little post because this naturally low carb side dish is seriously super easy to make.

🥘Creamed Spinach Ingredients:

  • 1 tablespoon Butter
  • 10 oz Baby spinach *Frozen (easiest) - or fresh and chopped; about 16 cups

I really prefer to use frozen spinach in this dish and keep the nice, fresh spinach for salads and omelettes.

Substitutes:

I have never tried this recipe with kale, mostly because I'm not super in love kale. But I bet it would work just fine if you want to sub it for the spinach.

Speaking of the spinach, it doesn't have to be baby spinach. But it is tender...mmmm.

  • 2 oz Heavy cream

You can substitute the heavy cream for any type of milk you want to use. I think broth or wine would work fine as well. But I would add only 1 oz, instead of two.

  • 3 oz Cream cheese cut into small pieces
  • ¼ teaspoon Garlic * dried or ½ teaspoon fresh minced
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt

To taste.

  • ¼ teaspoon Black pepper

This a "to taste" ingredient and can be subbed fro red pepper flakes if you want a little zip.

  • 3 oz Parmesan cheese optional, for topping

👩‍🍳How to make the Creamed Spinach:

This low carb creamed spinach recipe is naturally low carb...so any of your non-low-carb family will love it. Well, if they like spinach that is.

  • Heat butter in a sauté pan or wok over medium.
  • Add spinach and sauté for 2 to 4 minutes, until warmed.

No need to thaw frozen spinach if that is the way you chose to go. It will thaw in the pan.

  • Add the rest of the ingredients and stir until the cream cheese melts and the sauce thickens.
  • Serve hot or store in the fridge for 4-5 days.

Tips & FAQ's:

Can I make the low carb creamed spinach ahead of time?

Sure. Just reheat on the stove or in the microwave. It can last in the fridge for 4-5 days.

Can I freeze the creamed spinach?

I think you could freeze it but it's so quick to make that it might just be easier to make it fresh when you want it.

What kind of meal pairs well with the creamed spinach?
