Savory and filling Alfredo Sauce is perfect for the Low Carb WOE. Smother Zucchini noodles, broccoli chicken or shrimp. Easy and a classic choice for the holidays as well as quick enough for weeknight dinner.
Melt butter over medium heat in a medium saucepan. Add the pressed garlic and sauté for 20 seconds or until until fragrant. Don't allow to get black.
Add the whipping cream and cream cheese. Whisk constantly until smooth. Don't allow to boil. Gradually add the Parmesan cheese while continuing to whisk.
Add the oregano, pepper and salt. Whisk to combine. Simmer for about 1 minute to allow the flavors to meld; do not let it boil. Taste for seasoning and add more salt and pepper if needed.
Remove from the heat and serve. See post for serving suggestions if needed.Store leftovers in an airtight container in the refrigerator for up to 4 days.

This recipe yields about two cups of sauce. A serving is considered about 1/4 cup or 4 tablespoons.
