Keto Two Minute Chocolate Cake

Hey Keto People! You’re in for a treat! Just look at the gorgeous cake!

Even if you are not on the Keto diet or have never even heard of allulose, you should try the fantastic Keto Two Minute Chocolate Cake.

 It’s a rich dark chocolate confection that’ll satisfy your chocolate cravings and keep you on track with your weight loss goals too.

The best thing about this recipe is that you really can make it in about two minutes!

I love chocolate cake but when the cravings strike I can’t wait an hour to make, bake and wait for a whole chocolate cake. Even a really great cake like our Death By Chocolate Cake takes a little too long some times.

By then, I have usually caved and broken into the teen’s  super secret (lol) chocolate stash. And, I end up blowing more carbs than I would like on a single truffle. Sure, I use the tricks in this post about how to cheat on Keto and get away with it (occasionally).

But this super quick, tasty treat only has five net carbs.

In a pinch you can add a dollop of Keto Whipped Cream and a strawberry to make a romantic dessert out of the Keto two minute chocolate cake.  Two forks please…

This quick little recipe covers both quick romantic desserts and chocolate craving emergencies! I know that sometimes you just need chocolate right now….

Keto Two Minute Chocolate Cake Tips:

  • A small soup cup or large coffee mug is the perfect size for this little cake.
  • If you are storing the almond flour in the fridge or freezer ( which you should be) there will be some clumps in it. I usually microwave the almond flour and oil together for 10-15 seconds to warm it up.

Then you can stir it and the clumps will disappear.

  • Add the rest of ingredients and combine well but don’t over mix because the baking powder won’t be able to do it’s job.

Now you are ready to put it in the microwave for 90 seconds.  When it’s done it should look like the cake in the picture – just slightly pull away from the sides of the mug.

Two Minute Chocolate Cake Done

I have never had to cook a mug cake longer than 90 seconds, but if it doesn’t appear to be done you can put it back in for another 15 seconds.

  • Don’t over bake.

It has become my standard warning that if you over cook nut flours they will end up tasting bitter. Almond flour doesn’t need to “look” burnt to taste burnt either.

Generally at this point I just eat it because I can’t wait, and because I really like warm chocolate cake. But this is also the perfect size for me and keeps me from eating a whole chocolate cake, one sliver at a time….( I know you know what I mean about this).

This is a  superbly versatile recipe and you can spice it up however you want….

Optional Ingredients:

(Only add one or two at a time or you will wreck your ratios)

Use whatever you like. I like both.

I love really dark chocolate and this organic cocoa powder contains only .5  net gram of carbs per tablespoon. Plus, they have it priced right and I love a good deal.

  • A teaspoon of mayonnaise- or exchange all of the fat for mayo.

It might sound weird but it’s true…this slick addition will add richness and depth to this simple mug cake.  Also, I know that this is one of the most hated words in the English language but a dab of mayo will make your cake “moist”. Mooooissst. Haha.

  • Chopped nuts

Take the time to chop the nuts up…trust me. In a small cake like this, whole nut pieces are too much.

Okay, here is the deal with these chocolate chips. They taste pretty close to the real deal but there are a couple of downsides.

First, they are a little spendy but I feel like they are worth it for occasional treats.

Second, they do contain a small amount of Stevia. An that can cause some stomach upset and is also not great for you. You can check out our post about Keto sweeteners and make the choice for yourself.

I don’t really like Stevia.

But I feel like a small amount on occasion is okay if it helps me stick with the Keto lifestyle that has provided so many benefits for my family. If you haven’t already, you should read the 20 benefits of the Keto Diet. It has been ah-mazing for us and millions of other people too!

Because vanilla deepens the chocolate flavor.

  • Raspberry Extract

Don’t use much. About 1/16 of a tsp is enough.

A dash will do it or you’ll end up with a cinnamon mug cake.

Because Peanut Butter.

Chocolate and cayenne pepper is so 2012 but I still love it. Spice is my thing…

  • Add a square of  sugar free dark chocolate to the middle of the batter.

I doubt this needs any explanation.

Keep it Keto when you can…

During holidays I hear a lot about “cheat” days. We are all for occasional indulgence around here. But don’t do it often.

We have a very large extended family and we have been getting together pretty often lately. If we “cheated” every-time there was a get-together we wouldn’t be seeing any progress with our health or weight loss goals.

So here’s the deal:

We indulge when we want to at parties, when there is something that is “worth” it. Believe me, you won’t see either of us wasting carbs on sheet cake. What I am talking about is something irresistible..like french pastries or my sister-in-laws to die for layered chocolate cake.

But when we’re at home there’s no need to “cheat” because of simple recipes like the Keto two minute chocolate cake.

There are a few key ingredients that we always keep on hand so we don’t get caught in the middle of a craving and end up slipping back into bad habits. It’s easy to do  if you don’t keep a handle on it and start “slipping” at home.

Plus, it’s fun to find low carb alternatives. It sort of makes me feel like I am “winning” because I can find an alternative to damn near any food. And, I love trying out new recipes. It’s sort of our thing.

Keto Two Minute Chocolate Cake Recipe

This is the easiest anytime chocolate cake. It really only take two minutes to make for a decadent, low carb dessert.

Ingredients
  

Dry Ingredients

Wet Ingredients

  • 1 Large Egg.
  • 2 Tbsp Butter or coconut oil. melted
  • 1/2 tsp Vanilla Extract optional

Instructions
 

  • Place all the dry ingredients in a mug or a ramekin and combine well. Make sure there are no clumps
  • Add the egg, coconut oil and mix well using a fork. (It will be easier if you melt the butter or coconut oil first)
  • Microwave on high for 70-90 seconds.
  • (If you want to cook the mug cake in a regular oven, or you don’t have a microwave, I suggest you make 4-8 servings at once. Preheat the oven to 350 °F and cook for about 12-15 minutes or until cooked in the center.

Notes

Coconut oil will only take about ten seconds to melt in the microwave.
