You know the jingle…I want my babyback babyback babyback ribs! Even if you have no idea what I’m talking about, these Keto Copycat Chili’s Ribs are fan-freaking-tastic!

Just look at that char! This rib recipe is a tender taste explosion!

BBQ Sauce

  • 5 cloves garlic
  • ¾ cup Sugar Free ketchup

You can make your own sugar free ketchup or buy it here. This brand is my favorite right now.

  • ½ cup apple cider vinegar
  • 2 oz whiskey * optional- but fantastic

The original recipe calls for dark beer. I think whiskey gives it an extra special bite and smokiness but you can sub in some adobo if you’re not down with the booze in your sauce.

  • 1/4 cup tomato paste
  • 1/4 cup Allulose
  • 1 tbsp orange zest – fine zest

No oranges to be found in your low carb household? That’s ok. Use orange extract if you have it or toss in a bit of citric acid ( maybe 1/8 tsp).

Citric acid is a kitchen staple these days and you should pick some up pronto if you don’t have it in your pantry.

Use your favorite brand.

  • 1/2 tsp. black pepper
  • 1/2 tsp. onion powder
  • 1/4 tsp. liquid smoke -optional

Instructions

Ribs

  • In a small bowl, combine the spices for the rub.
  • Season ribs all over with the spice mixture and place in an oiled crock-pot on high. One rack on each side or wrap the racks along the edges is necessary.Or alternatively, wrap in foil and place in the oven @ 275F. I used the crock-pot because it doesn’t heat up the house as much and I can even put it on the deck if I want.
  • Cook the ribs until the meat is tender, a knife should easily pierce the meat, 2½ -3 hours depending on your crock-pot. Remove and let cool slightly.

Sauce – make this while your ribs are cooking.

  • Put all of the sauce ingredients into a blender and puree until it’s a smooth-ish consistency.
  • Scrape it all into a small sauce pan and bring to a boil over medium-high heat. Reduce the heat to medium-low. Simmer, until thickened and darkened slightly. This will take about 20 minutes. Remove from the heat and set aside.

Finish the ribs like a pro-

  • Preheat your grill to medium/high. Oil the grates with a brush. Carefully, remove the baked ribs from the crock pot or foil. Brush both sides with the BBQ sauce. Grill until sauce is bubbling and ribs are lightly charred, about 4-6 minutes per side, brushing with more sauce if desired. Serve hot with sauce for dipping.

Tips & FAQ’s

The best tip for the tenderest, most juicy ribs you’ll ever eat is to slow cook them and then grill. If you’re a grill master than you have it covered.

  • You can cook the ribs in the oven or the crock-pot before grilling. They will come out great either way. I love the crock-pot because it’s been too hot to heat up my oven.
  • These baby back ribs freeze nicely. Just thaw in the fridge or on the counter and grill to reheat.
  • Any type of pork ribs will work. If you use country style ribs they might cook faster since there is so little bone involved.
