Season ribs all over with the spice mixture and place in an oiled crock-pot on high. One rack on each side or wrap the racks along the edges is necessary.Or alternatively, wrap in foil and place in the oven @ 275F. I used the crockpot because it doesnt heat up the house as much and I can even put it on the deck if I want.
Cook the ribs until the meat is tender, a knife should easily pierce the meat, 2½ -3 hours depending on your crock-pot. Remove and let cool slightly.
Sauce - make this while your ribs are cooking.
Put all of the sauce ingredients into a blender and puree until it's a smooth-ish consistency.
Scrape it all into a small sauce pan and bring to a boil over medium-high heat. Reduce the heat to medium-low. Simmer, until thickened and darkened slightly. This will take about 20 minutes. Remove from the heat and set aside.
Finish the ribs like a pro-
Preheat your grill to medium/high. Oil the grates with a brush. Carefully, remove the baked ribs from the crock pot or foil. Brush both sides with the BBQ sauce. Grill until sauce is bubbling and ribs are lightly charred, about 4-6 minutes per side, brushing with more sauce if desired. Serve hot with sauce for dipping.
