Low Carb California Roll Bowl Recipe

The Keto California Roll Bowl is fun to say and even more fun to eat. It has the California Roll flavors without all of the high carb rice.

It's super easy to customize to your liking and it's a meal prep dream come true.

🥘  Ingredients:

Chopping up the ingredients ahead of time or on a meal prep day/ your day off makes this meal such a breeze when you are ready to serve it.

I like to chop veggies for the week on Sundays because I figured out that we eat them more often if they are ready to go.

I keep them in a container like this ~

Chopped Veggies

Wasabi Dressing~

  • 6 tablespoon mayonnaise
  • 2 teaspoon wasabi paste

Keto California Roll Bowls~

  • 16 oz riced cauliflower fresh or frozen

I used to think that frozen riced cauliflower didn't work as well as fresh riced cauliflower.

I have changed my mind about this. It's so convenient and about the same price as fresh cauliflower when I get the frozen, riced stuff at Costco.

  • 1 tablespoon butter

Butter, not oil is key in making Asian food taste like the take-out stuff...or as close as cauliflower can taste to regular take-out rice.

  • 1 tablespoon Allulose or preferred sweetener

It might seem strange to put sweetener in the riced cauliflower but I swear it makes a huge difference in the taste.

  • 1 tablespoon toasted sesame oil

This is an ingredient that should never be skipped in making Asian food. It also makes a wonderful dressing.

  • 8 oz lump crab meat * I used canned and I think Tuna would work well too. Plus, it's much more economical.

Canned crab meat at my local store cost about $8.00.

I really don't dig the imitation crab tubes meat unless I am making actual sushi rolls so I bought the canned meat. But, I think that I'll use tuna next time since the meat is mixed with mayo and sriracha anyway.

  • 1 tablespoon mayonnaise
  • 1 tablespoon Sriracha sauce
  • ½ avocado sliced
  • 1 sheet nori Cut into short, thin strips for garnish.

I used the seaweed snacks that my teen begged for and never ate because I had them. ( I keep falling for this).

  • ½ cucumber thin sliced

You can de-seed the cucumber if you like but I usually just slice the whole thing. The seeds don't bother me but you can de-seed them if you like.

  • ½ cup shredded cabbage ( about 50 grams) *optional - red makes your bowl pop visually but any variety is good.

I add cabbage when I have it and leave it out when I don't.

  • 2 radishes thinly sliced
  • 1 oz carrots *optional - julienned into matchsticks
  • ¼ cup Chives or green onion *chopped- optional garnish
  • Pickled Ginger *Optional Garnish

  • Chop Veggies First

Chopping the veggies ahead of time is a huge time saver when you are tired and making a weeknight dinner.

Dressing~

  • Mix the ingredients for the dressing in a small bowl until well combined.

Sushi Bowls~

  • In a cast iron pan or wok over medium/high heat, combine the cauliflower with the butter fry for 5 minutes or until tender crisp.

Don't overcook the cauliflower or it will be mushy. Just cook it long enough to get the moisture out, flavors in and heat it up.

  • Remove from the heat and sprinkle on Allulose and stir in the sesame seed oil.
  • In a medium bowl, combine the meat, mayonnaise and Sriracha. Stir until combined.
  • Divide the cauliflower rice among 4 bowls. Top each with one-quarter of each ingredient that you are using. Sprinkle with sesame seeds or capelin if desired.
  • Serve with the dressing and soy sauce on the side.

📋Tips & FAQ's:

Can I make the Keto California Roll Bowl ahead of time?

Yes, Yes, Yes! But skip slicing the avocado until you are ready to eat.

If you are meal prepping, assemble the bowl and keep the dressing and meat on the side until you are ready to eat it.

This meal cannot really be frozen.

I love sashimi, can I use that?

Yes, use any fish/meat that you like.

Isn't this just stir fry? ( My teen asked this question so I thought I would address it).

No, Stir Fry is cooked veggies and totally different flavors.

This dish has all of the California Roll ingredients, minus the rice of course. Totally different flavors.
