Hey Keto People!

These Keto Bagels hit the spot when you are craving the chewy goodness of crusty, toasted bagels.

Whether you slather them with cream cheese, smoked salmon or just plain butter, you’ll be glad that you took the time to make these.

You can have these babies on the table in about thirty minutes. You’ll be glad you did this for yourself.

The Keto Bagels Ingredients:

  • 1.5 cups Almond flour
  • 1 tbsp Baking powder
  • 2 oz Cream cheese cubed
  • 2.5 cups Mozzarella cheese shredded
  • 2 Eggs beaten
  • Sesame seeds *optional

You can top your bagel whatever you like. I used sesame seeds for this batch but my daughter LOVES everything bagel topping. She puts it on everything that it will stick to.

Or, you can save a lot of money by making it yourself if you use it often. You can find the recipe at the bottom of the everything bagel crackers post. It’s super simple and costs pennies on the dollar to make compared to the store bought stuff.

The Instructions

  • Preheat the oven to 400F. Line a baking sheet with parchment paper.

Always use parchment paper when doing your Keto Baking. It save a lot of cleanup.

  • Stir together the almond flour and baking powder. Set aside.
  • Combine the shredded mozzarella and cubed cream cheese in a large bowl. Microwave until melted enough to fully incorporate. Stir every 30 seconds and don’t burn it or the cheese will seize. You can use a double boiler if you like instead of the microwave.

It’s really important to stir the cheeses every 30 seconds. If you burn the cheese it will seize and your bagel project will come to a standstill.

  • Stir the flour mixture and eggs into the melted cheese mixture. Mix with a dough hook in the kitchen aid or knead with oiled hands until the dough is completely uniform. THIS IS IMPORTANT.

I love my kitchen-aid mixer. But if you don’t have one…no problem. Oil your hands and knead it until ALL of it is incorporated and smooth.

  • Shape the dough into a disk and cut into six even pieces.

  • Shape each piece into a disk and poke your thumb through the middle to make a hole. Continue shaping your bagel.

Now, I find this the easiest part of making the bagels. I don’t want to spend money on a bagel pan and I certainly don’t want to have to store anything that I don’t use all of the time.

But if you are making a ton of different kinds of bagels all the time it might be worth the small investment.

  • Brush top with a little oil or butter and add sesame seeds or whatever topping you like.
  • Place on a parchment covered cookie sheet and bake for 12-14 minutes until golden and firm.
  • Let cool completely before slicing. You can toast if you like but the bread will be soft while it’s hot because it’s a tasty cheese based dough.
