🥘Ingredients

Salad

  • 2 baby bok choy chopped

You can use cabbage if you prefer.

  • 1/2 cup cucumber peeled and chopped
  • One half cup green onions sliced
  • 1/2 cup orange bell pepper
  • One half cup peanuts – or cashews

Note: Cashews have a higher net carb count than peanuts. The nutrition was calculated using peanuts.

  • ½ bunch cilantro

Dressing

  • ¼ cup olive oil
  • 3 cloves garlic peeled
  • 2 tablespoons soy sauce
  • 1 tablespoons rice wine vinegar
  • 2 tablespoons allulose – to taste of course
  • 1 tablespoon sesame oil
  • 1 inch ginger peeled
  • squeeze of lime juice

  • Chop all of the vegetables and add them to a medium sized mixing bowl.
  • Put all of the dressing ingredients in a blender and pulse until smooth. Mix into the salad.
  • Serve
