Zucchini Fries Recipe

Since the day that I got my Air Fryer this Low Carb Zucchini Fries recipe has been the single most requested zucchini dish in my house. Well, it might be close to Keto fried pickles– everyone loves those. Now that zucchini is in season, and I have made this approximately 492 times this month, I thought I would post it.

I love this recipe. It tastes like lazy evenings in the pub next to the river. They taste like my 20’s…

I know you know what I mean.

Well maybe you don’t, but everyone I know remembers the first time they had zucchini fries. And, they are so much easier to make at home than I ever realized.

Served Low Carb Zucchini Fries

🥘Ingredients:

  • 2 zucchini medium

Cut the zucchini before you start anything else. It will make this recipe a lot easier.

  • 1 egg beaten
  • ½ cup almond flour
  • ½ cup Parmesan cheese grated cheap stuff in the green can works well

If you decide to use shredded Parmesan instead, make sure you really get the mix pressed into the zucchini.

You don’t want cheese shreds flying around in the fan of your air fryer.

Taste the flour mixture before you start rolling your zucc’s in it. You’ll be glad you did.

Spice is awfully subjective.

  • Oil for spraying Olive oil is great for this recipe

The neutral flavor of olive oil is perfect for this dish. But, it’s your party so use whatever oil you like.

👩🏻‍🍳 How to make Zucchini Fries:

  • Cut the zucchini in half crosswise and into sticks (aka fries) about 1/2 inch thick and 3-4 inches long.
  • In a shallow bowl, combine the almond flour, grated parmesan and a pinch of salt and pepper. Mix to combine. In a separate bowl beat the egg. Now you have a dipping station.
  • Dip zucchini in egg and then press into the flour mixture. Place on the air fryer rack or parchment covered baking sheet.
  • You can repeat if you have any fries that need a little extra love at the end.

I only do this is I have extra flour mixture. You can’t “save” it and I’m a cheapskate at heart.

I can’t stand to throw it away.

  • Working in batches if needed, place the zucchini fries in a single layer in the air fryer.

I have this Air Fryer and I’m able to fit this recipe on the top rack without having to do batches…unless I am making a double batch.

  • Air Fry for 10-12 minutes at 390F, or until brown and crispy.
  • To make in the oven: Preheat to 425F and bake until golden brown.
  • Serve with your favorite dip.

Can I make this recipe ahead of time?

Well….you can store leftovers in the fridge and reheat them in the toaster oven or air-fryer. But this isn’t a great “meal prep” food.

They don’t take long to make so it shouldn’t be an issue or barrier.

Can I freeze this recipe?

No. The texture will be weird if you freeze this dish.

Can I exchange the almond flour with coconut flour?

Absolutely! Start with about 1/4 of a cup instead of a 1:1 exchange.

I regularly exchange the almond flour with Carbquik because it makes for a crunchier texture.
