Zucchini Chevre with Roasted Tomatoes

This Low Carb Zucchini Chevre with roasted tomatoes is a thing of beauty. It’s a simple, healthy side dish made with quality ingredients. And, this easy zoodles side is yours in less than 30 minutes.

Served Low Carb Zucchini Chevre

🥘Ingredients:

  • 3 zucchini
  • 1 tbsp. olive oil
  • ½ tsp salt to taste
  • ½ black pepper – to taste
  • 10 cherry tomatoes halved * Broiled for 3-5 minutes. (optional) See post
  • 6 oz Chevre * crumbled -Or fresh mozzarella

If you don’t love creamy goat cheese you can opt for fresh mozzarella. Voila, you have a Caprese Salad Zoodle Dish!

  • 1/4 cup pesto

You can either use the kind at the deli (check ingredients), or make your own pesto. It’s so easy! Any of these are great for the Zucchini Chevre…

Garnish

  • 2 tbsp. balsamic vinegar or low carb balsamic glaze *optional

1.) Slice cherry tomatoes in half and broil for 5-10 minutes until the skins are slightly wrinkled. (Optional step but this really gives the dish a major upgrade in flavor).

2.) Spiralize the zucchini.

3.) Add the zucchini noodles to a large bowl, toss with olive oil, salt pepper and pesto. Top with tomatoes and goat cheese ( Chevre).

4.) Serve with balsamic vinegar or low carb balsamic glaze if desired.

Tips & FAQ’s:

Can I make this Zucchini Chevre recipe ahead of time?

Yes! But, as the zoodles marinate in the pesto, they will weep (excrete water). I like it because it softens the zucchini noodles and makes a sauce.

But, if your prefer a drier zoodle dish, check out his post on how to dry zucchini noodles by baking them.

Or, you can always lightly salt the zoodles and let them drain in a colander for 20-60 minutes. This adds some time to the finished recipe (of course).
