The Low Carb Zucchini Chevre with Roasted tomatoes is simple side dish marked with quality ingredients. The zucchini doesn't need to be cooked as it softens when marinated in the pesto. This is the perfect accompaniment to any low carb / Keto Meal.
10cherry tomatoes halved* Broiled for 3-5 minutes. (optional) See post
6ozChevre* crumbled -Or fresh mozzarella
1/4cuppesto
Garnish
2tbsp.balsamic vinegar or balsamic glaze*optional
Instructions
Slice cherry tomatoes in half and broil for 5-10 minutes until the skins are slightly wrinkled. (Optional step but this really gives the dish a major upgrade in flavor).
Spiralize the zucchini.
Add the zucchini noodles to a large bowl, toss with olive oil, salt pepper and pesto. Top with tomatoes and goat cheese ( Chevre).
Serve with balsamic vinegar if desired.
