Low Carb Frijoles Borrachos

Are those BEANS? Yes, but don’t call the Keto Cops just yet. The Low Carb Frijoles Borrachos (Drunken Beans) recipe is made with Low Carb / Keto Friendly beans.
Black soybeans to be precise. And, yes, there is low carb beer in this recipe because Frijoles Borrachos is where beans meet beer and have a party on your plate…

🥘Ingredients:
- 4 slices bacon uncooked -diced
- ¼ onion finely diced
- 1 jalapeno * Optional to taste – stemmed, seeded and diced
- 2 cloves garlic minced
- 12 oz Coors light * or similar low carb beer
The alcohol will cook out and you’ll only be left with that hoppy flavor. (I promise your kids won’t get tipsy on these beans).
- 30 oz black soybeans *cooked (2 cans of black soybeans).
The easiest way o make this recipe is to use canned black soybeans. if you don’t have them in your supermarket yet, you can find them here…
I bought a huge bag of dried black soybeans because I am a cheapskate about paying for canned beans.
I make them in the pressure cooker in about 40 minutes and keep them around because they are AWESOME and so versatile.
- 1 Tbsp Allulose
- One tsp dried oregano
- 1 tsp chili powder
- One tsp chicken bouillon * or one cube
- 1 tsp cumin
- ½ tsp maple flavoring * optional but delicious
The original Frijoles Borrachos Recipe is made with dark beer and brown sugar. We aren’t doing that for obvious reasons, but the maple flavoring gives back the flavor.

Optional Garnish
- 1 Tablespoon fresh lime juice
- 1/4 cup chopped fresh cilantro
👩🏾🍳How to make the Frijoles Borrachos:
- Cook diced bacon in a large sauce pan over medium-high heat until almost crispy, stirring occasionally.
- Add the onion and jalapeno, and saute for 5 minutes or until the onion is soft and translucent.
- Toss in the garlic, and saute for an additional 1-2 minutes until fragrant. Add the beer, beans, allulose, oregano, chili powder, chicken bouillon and cumin, and stir to combine.
- Continue cooking until the beans reach a simmer. Then reduce heat to medium-low, and continue simmering uncovered for about 15 minutes or until almost of the liquid has evaporated.
- Turn off the heat and add the maple flavoring if using. Then serve the beans topped with fresh cilantro, hot sauce or sour cream.

Can I make these Drunken Beans ahead of time?
Yes! The keep well and reheat beautifully. They’re good in the fridge for 4-6 days easy.
You can freeze the cooked soybeans before you make the rest of the recipe if you want to have them on hand.
