Savory and spicy with just a hint of sweetness. This Drunken Bean Recipe is the low carb version of the classic Mexican Frijoles Borrachos side dish. This is the perfect low carb side for any Mexican meal.
Cook diced bacon in a large sauce pan over medium-high heat until almost crispy, stirring occasionally.
Add the onion and jalapeno, and saute for 5 minutes or until the onion is soft and translucent. Add the garlic, and saute for an additional 1-2 minutes until fragrant. Add the beer, beans, allulose, oregano, chili powder, chicken bouillon and cumin, and stir to combine. Continue cooking until the beans reach a simmer. Then reduce heat to medium-low, and continue simmering uncovered for about 15 minutes or until almost of the liquid has evaporated.
Turn off the heat and add the maple flavoring if using. Then serve the beans topped with fresh cilantro, hot sauce or sour cream.
